MAJOR RESPONSIBILIES 責任概要 :

Administer the entire Culinary operation in such a manner as to bring into effect the superior product and service expected for our guests in accordance with policies and procedures adopted by the Hotel.  The Executive Chef must develop long-range plans while resolving daily challenges across the entire spectrum of the department. The Executive Chef must thoroughly understand the basic principles of each component of the management system for F&B operations.

根据酒店制度和程序要求负责厨房的全部运营管理,为客人提供满意的食品和服务。制定长期计划,处理部门日常需要解决的问题。同时透彻了解管理集团制定的各项制度,以便餐饮部更好的操作运营。

 

 

SPECIFIC DUTIES 工作任務 :

                                                                                                                                                           

Major Responsibilities:

  1. Be responsible for all Western Culinary areas, ensuring a smooth running, profitable operation within the framework of the Hotel. 

       直接负责西厨房区域工作,确保其在酒店构架下顺利的、有效的营利活动。

  1. Constantly research, develop and maintain the hotel cuisine concepts and standards for food preparation and presentation.

    定期的调查、创新及保持酒店的餐饮理念,使餐饮的前期准备和出品达到标准。

  2. Maintain food cost by ensuring that proper preparation, inventory, requisition, food parts and control systems are in place in all food operations areas.  

       通过正确得当的前期准备、备货、申购、食品安排及控制系统,控制餐饮成本。

  1. To analyze food operations from the standpoint of operating costs, increasing sales, efficiency, merchandising principals, work simplification and sanitation.

           通过运营成本、销售量的增长、效率、采购、工作简洁化和卫生状况分析食品的运营。

  2. Enforce the Marriott food preparation and presentation guidelines to ensure consistent quality culinary offerings to our guests.

           执行万豪集团对餐饮准备及出品的标准,始终保持对客人提供高质量的服务。

  3. Maintain food safety & protection.  All food working areas should be in compliance with food         handling techniques, to include dating, proper storage, rotation, etc.

    保证食品安全,所有工作区域必须保证食品的正确的加工处理,包括:保鲜日期、正确储存方法、加工利用等。

  4. Enforce Marriott’s 43 point Sanitation Checklist by having all Kitchens inspected on a monthly basis.

    执行万豪集团卫生标准43点,每月对厨房进行检查。

  5. Be responsible for the monthly department Profit & Loss Statement.

负责部门每月的损益报表陈述。

  1. To accurately on forecast business demands on a weekly basis to ensure efficient staffing & food production.

     准确预测每周的生意确保有效的人手安排和食物出品。

  2. Planning, finalizing and executing renovation projects for kitchens.

规划,完成和执行厨房的项目改造。

  1. Maintaining staff turnover at reasonable levels.

保持员工的流失率在一个合理的水平。

  1. Be responsible to maintain the overall welfare of our Associates by providing them with the training and resources to take care of our guests.

General Duties:

 

  1. To ensure the awareness & enforcement of all Marriott S.O.P.’s & Property L.S.O.P.’s.

    确保对万豪集团的标准程序及本地标准政策程序的高度认知性和执行性。

  2. To enforce operational Standards that are reviewed periodically, updated & improved.

对营运标准进行定期考核、更新和改进。

  1. To be aware of competitors in the market and complete a competition analysis on a quarterly basis.

    对于竞争对手保持足够的认知度,完成每季度对手分析报告。

  2. To ensure the efficient scheduling of management and associates.

    制定确保管理层和员工有效的工作计划安排。

  3. To be responsible for the accurate supervision of the associate time control and payroll systems by working with Accounting and HRD.

    协助财务部及人事部监督员工的工作时间及工资制度。

  4. To develop and implement Manager, Supervisor & Associate training plans on a quarterly basis in conjunction with HRD.

协助人事部每季度做好对员工的管理、监督和培训

  1. To implement a departmental daily “15 Minute” training program.

    每日执行部门内部的“15分钟培训。

  2. Be responsible for the execution of Culinary Management reviews and appraisals in a professional and timely manner.

    负责监督厨房管理的回顾总结,并进行及时的、专业的评估。

  3. To practice “open door” policy to all Associates.

    对所有的员工实行打开门的政策。

  4. Periodically plan outside Associates activity to promote teamwork.

  1. To be responsible for maintaining outlet safety at all times.

    随时保证厨房的安全工作。

  2. Be responsible for asset management of all outlet property and facilities.

           对部门的酒店财产及设备进行资产管理。

  3. Conduct a preventative maintenance inspection on a monthly basis.

每月进行预防性维护检查。

  1. Promote positive inter-departmental relations through candid communication and cooperation.

           通过部门内部的相互交流和协作保持与其他部门的协调关系。

  2. To respond to guest inquiries or concerns within 24 hours in what is deemed the appropriate manner.

           在回复客人的询问时,随时考虑如何正确对待客人的方式。

  3. Ensure all Managers and Associates follow all job safety regulations and all hazards are reported to Loss Prevention and Engineering.

    确保所有的经理和员工都严格按照安全程序工作,出现任何危险情况要及时呈报给保安部和工程部。

  4. Perform any reasonable request made of management which is not life threatening or against the law.

    对于管理层提出的合理的、不危及生命安全、不违反法律的要求尽可能执行。

  5. Complete the other reasonable duties assigned by HRM.

    完成上司分配的其他合理工作。

 

NOTICE注意 :   

The hotel business functions seven days a week, 24 hours a day. All associates must realize this fact and be aware that at all times it may be necessary to move associates from their accustomed shift as business demands. In addition, this is a hospitality business and a hospitality service atmosphere must be projected at all times.  Management reserves the right to make changes to this job description at its sole discretion and without advance notice.

工作能力:

  • 10-15        years of relevant working experience in hospitality industry
  • Should        have worked with Marriott or other international hotels companies
  • Should        have worked in restaurants & bars, covering diverse cuisines &        concepts
  • Should        have led multiple restaurant teams
  • Able        to lead the lead the Food & Beverage team in the absence of the        Director F&B

 

Language 语言能力:

  • Good        oral & communication command over English language
  • Good        command over Mandarin

 

Education 教育:

  •  Graduate or Hotel school qualification
