• 成本控制主要负责向财务总监和餐饮总监提供可控制的销售成本信息.同酒店一同建立和管理食品和酒水控制体系及程序以确保酒店食品和酒水得到最大利润,将高标准的品质和服务相容合。
This position is responsible to provide the DOF and F&B Director with cost of sales information needed to control costs. Established and administrated food and beverage cost control systems and procedures with the hotel to ensure that food and beverage profit are maximized. Consistent with high standards of quality and service.
• 通过对潜在和实际的食品花销来确保有效的食品成本分析
To ensure effective analysis of food costs by commenting on variances between potential and actual food costs, analyzing recipes, yields and portioning of orders and recommending accordingly.
• 通过分析餐饮部销售情况的明细来分析食品和酒水销售情况. 制作每日餐饮部成本报表,以及准备各种相应的析报表
To analysis food & beverage sales by comparing detailed food and beverage sales information. Computing daily cost percentage by Food & Beverage Department, and preparing various analytical reports as required.
• 通过提供相关食品成本信息为餐饮部创造利益并根据要求参于菜单的定价.
To contribute to food & beverage profits by providing information on food costing and participating in the pricing of menu items as required.
• 通过检查相应的原料采购库存记录来控制库存,确保规则的库存体系并加以改进提高.
To contribute to inventory control by overseeing proper record-keeping of inventories on raw materials purchased, ensuring regular inventory-checking and assisting in the review and improvement on inventory control systems.
• 通过监督及有效的解决各种问题来确保高效率的管理.
To ensure overall efficiency of the section by providing supervision and reference to staff whenever required, and resolving effectively problems referred.
• 执行并完成财务总监和助理财务总监指派的任务.
To carry out all jobs and relevant duties assigned by DBFS and AFC.
