General总则
Produce all Food required for the assigned Kitchen
Control the daily requisitions and Kitcheninter-transfers.

Ensure at all times that the labor cost is keptwithin the budget.
Supervise and allocate work to staff according totheir knowledge and skill level.
Submit new proposals to the Asst. Pastry Chef, orExecutive Pastry Chef for discussion prior to food tasting.
Monitor and check the buffets to ensure that theyare replenished and visually attractive at all times.
Follow recipes for producing items accurately, andalways update them.

Work closely with the Chief Steward to keep kitchenin top condition.

Assist and / or conduct regular training sessionsfor staff.

Work with the Executive Pastry Chef / Asst. PastryChef in encouraging staff, and constantly keeping up staff morale.
Conduct regular communication meetings and briefingswith the kitchen personnel.

Authorize overtime only after consulting and gainingapproval from the Executive Pastry Chef.

Assist the Executive Pastry Chef to keep the foodcost for the assigned kitchen within the budget.
Prevent wastage of surplus stock without unduesacrifice on food quality.

Control effective storage and stock levels, whilealways being cost conscious.

Assist the Executive Pastry Chef / Asst. Pastry Chefto ensure the hotel’s high standards are maintained and improved continually.

Fill in the temperature log book to ensure FSMSstandards

Maintain and enhance staff grooming and personalhygiene.
Keep the Kitchen equipment in good condition at alltimes to maximize its operating life.

Kitchen overall performance, average check andcosts.
Knowledge of recipes ingredients, F&B outletsofferings and hotel services.
Ability to explain recipes and techniques to Chef dePartie, Demi Chef, Chef Line Commis, Apprentice and customers, and, to createtraining for all staff involved.
Facility and ability to train staff in all areas
Ability to recognize when the situation is out ofhand and inform Department Head Chef / Chef de Cuisine of any problem orcomplaint.
Receipt of positive comments from F&Bdepartments or guest.
Maintain a good and professional relationship withstaff, coworkers and managers.
Ability to perform well under pressure withoutcompromising service quality.
Service etiquette and 5 star service standards.
