Assistant IRD Manager
The Asst. In-Room Dining Manager is overseeing all food and beverage service of In-Room Dining, Refreshment Center and Guest amenities service.
Hotel Overview: Fairmont Chengdu, situated within the Palm Springs International Centre, is located in the heart of Tianfu New Area and Chengdu Hi-tech Zone and is adjacent to the Century City New International Convention & Exhibition Center, Global Center and the Tianfu Software Park. Palm Springs International Centre includes the hotel, an grade A level commercial office tower and two luxury residential towers, anchored by a 42,100 square meter retail mall.
The hotel features 336 guest rooms, Willow Stream Spa, Gold Executive Floor, over 1,350 square meters of meeting facilities, and a collection of F&B concepts including an all-day-dining restaurant Spectrum, CUBE a three-floor concept - lounge, cocktail bar and Japanese restaurant, a signature Sichuan Chinese restaurant Chang Yi, and our feature restaurant and bar occupying the top two levels of the hotel, Manhattan. The hotel is expected to open in 4th quarter of 2016.
Chengdu is one of China’s most famous cities and is a top destination for people from China and around the world to visit. It has a deep culture and history, hundreds of amazing tourist attractions and of course the famous Chengdu and Sichuan cuisine. Chengdu has been listed as one of the fastest growing and top 4 cities to live in in China.
Summary of Responsibilities:
Reporting to the All Day Dinning & IRD Manager, responsibilities and essential job functions include but are not limited to the following:
Maintain a clean and safe work environment
To be aware of all hotel service and promotions in order to assist any guest.
Keep an up-to-date knowledge of the menu, beverage list and wine list.
Review all group resumes and BEO in order to ensure the successful completion of all IRD responsibilities as outlined in the resumes or BEO.
Keep an up-to-date knowledge of the menu, beverage list and wine list as well as ensure that all colleagues do the same.
Ensure that standards are maintained and all documentation pertaining to the standards are utilized (i.e. F&B basics, process briefs, jtc’s, etc) each shift.
In addition, ensure that all colleagues and leaders receive the necessary training on the standards
Ensure the proper organization of all service equipment. Ensure proper mis en place and station set up to ensure a smooth operation.
Supervises and assists in service for VIPs
Check outgoing orders for accurate set ups
Do daily food and beverage requisitions
Coordinate Floor checks and guest room pick ups
Together with the Manager, is responsible for progressive corrective action for colleagues when performance issues occur.
Handle guest requests and complaints.
Maintain communication between IRD and all supporting departments.
Maintain good working relationships with all fellow colleagues and leaders in IRD as well as supporting departments.
Allocation of duties to different shifts and team members.
Checking of tray and table set up to ensure departmental standards is always maintained.
Overall responsibility of cleanliness and maintenance of all equipment (including menus)
Audits standards and takes note of guest feedback in order to make positive changes to the product/service offering of IRD.
Conduct shift briefings and daily training sessions for all supervisors and colleagues.
Ensuring all food and beverage and equipment requisitions are completed.
Ensure that departmental logbook and pass off is completed, ensuring follow up on any outstanding issues from Pass off.
Coordinate amenity orders, preparation and delivery.
Ensure adequate communication between all shifts.
Oversee RC operation, ensuring all departmental policies are adhered to.
Check VIP list and follows up on all deliveries
Ensures that scheduling of colleagues is in accordance to business levels
Ensures that the payroll of all IRD colleagues is submitted and is accurate.
As a department head in food & beverage, work with all F&B leaders ensuring that all departments have adequate leadership and colleague coverage.
Ensures adherence to Fairmont’s Code of Ethics
Other duties as assigned.

Certifications from Health & Safety courses
