1. Ensures that all food prepared and served in accord with the standard set
确保所有准备的食物和服务与酒店的相关标准相一致。
2. Checks daily miss-en-place, cooking preparation and presentation of all food
检查每日的估清，已经准备好的备料以及要呈现的食物。
3.  Assists Executive Chef in planning menus, daily specials, food promotions etc.
协助行政总厨规划菜单，每日特价食品促销活动等。
4.  Coordinates with the butcher and pastry chef the daily requirement
协调肉房和饼房厨师长的每日所需。
5. Supervise buffet service and direct refill preparation
监督指导自助服务和直接填充准备。
6. Knowledge of safety & hygiene procedures and train the staff accordantly
按照安全卫生程序培训员工。
7. Consolidates all food requisitions and controls them in cooperation with Executive  Chef then presents them to Executive Chef for approval
配合行政副总厨总结所有关于食品的需求并加以控制，然后呈报给行政总厨批准。
8. Makes sure that all inter-kitchen’s transfers are complete, accurate and made in time
确保所有厨房间的转移是完整，准确，及时作出。
9. Helps Executive Chef and Executive Sous Chef in checking the quality of food being received from the direct market
协助行政总厨和副总厨检查所有直接从市场上收货的食物的品质。
10. Makes out time schedules and annual leaves in cooperation with the section heads for Executive Chef’s approval
在分部门主管的协助下做好排班表和休假申请，并报以行政总厨审批。
11. To attend any training sessions as directed by the Executive chef, To adapt to the work of any kitchen for improve own skill. If any kitchen need assist, should arrange staff cooperate to make sure the operation smooth.
参加由行政总厨直接进行的培训，可适应任何厨房的工作以便使自己更加进步. 如果有其他厨房需要协助，应当主动安排员工在适合的情况下积极配合以保证酒店运营。
