一、岗位名称：副厨师长

二、直接上司：厨师长

三、管理对象：西厨领班、包饼领班

四、岗位提要：协助厨师长全面负责西厨房各点的生产管理工作，带领员工从事菜肴及包饼制作，保证向宾客及时提供达到规定质量之产品。

五、岗位职责：

1、协助厨师长做好西厨房生产、人员的组织管理作。

2、协助厨师长安排厨房人员的调配和班次的计划安排工作。

3、根据厨师的技艺专长和工作表现，建议安排合适的工作岗位，负责对属下进

行考核评估。

4、负责对菜点质量进行现场指导把关，重大任务亲自操作以确保质量。

5、根据菜单，制定菜点的规格标准；检查库存食品的质量和数量，合理安排使用食品原料，审签原料订购和领用单，把好成本控制关。

6、负责指导咖啡厅厨房及西餐厨房领班工作，搞好班组间的协调工作，及时解决工作中出现的问题。

7、协助厨师长对厨房员工培训计划的制定和实施，

8、督促员工执行卫生法规及各项卫生制度，确保食品安全。

9、负责新来的员工正确的使用厨房设备等，协调部门关系，不断改进工作。

10、参加餐饮部有关会议，贯彻会议精神，就改进西餐生产和管理工作及时向总厨汇报。

七、任职条件：

1、有较强的事业心，热爱本职工作，工作认真负责。

2、熟悉西厨房生产流程，掌握较全面的西餐菜肴制作技术。

3、有一定的组织管理能力和一定的专业英语基础。

4、具有3年以上西厨主管工作经历。

5、身体健康，精力充沛。
