Principle Responsibilities & Position Purpose:

职责目标:

 

Under the general guidance & supervision of the Executive Chef within the established policies & procedures of Hilton, oversees & directs all aspects of stewarding operation.

在行政总厨的指导下, 根据希尔顿酒店既定的政策和程序, 督促和指导管事部的运作.

Directs the efforts and activities in the stewarding section to ensure quality standard of  cleanliness, hygiene and sanitation of all kitchen areas, equipment and utensils are  maintained at the all times, leading to guest satisfaction, employee satisfaction and profit for the hotel.

指导的有效率的管事部的工作,确保所有的厨房区域的清洁,卫生达到卫生质量标准,维持设备和器具的清洁,使酒店达到客户满意,员工的满意和预期利润。


Essential Responsibilities:

Responsible for guiding the steward supervisors and stewards in the performance of their jobs..

负责指导管事部员工的工作

Responsible for controlling & analyzing on an on-going basis the following:

负责控制以下各项

Cleanliness standard for kitchen areas, banquet rooms (back of the house), equipment & utensils.

保持厨房,宴会厅 (后面的地方 )各区域及设备的卫生标准.

Guests & team satisfaction.

客人及员工的满意程度.

Operating supplies, cleaning supplies payroll and related costs.

运作供给, 清洁供给, 工资和相关费用.

 

Breakage and Loss

器皿和设备的损坏及遗失

Responsible for implementing the detailed cleaning program as scheduled, monitoring the results of each action.

负责按日程执行清洁计划并检查结果.

Responsible for keeping up to date with new cleaning supplies, equipment, trends and systems in stewarding.

负责管事部的清洁用品, 设备, 工作体系的更新及管理.

Responsible for providing functional assistance to the stewards during operations.

给管事部的员工必要的帮助.

Responsible for the proper handling and maintenance of all equipment in the Kitchen.

负责厨房设备的清洁, 维护和保养.

Responsible for the storage and safekeeping of all flatware, glassware, hollowware, utensils and related equipment.

负责储存保管盘碟器皿和设备.

Responsible for the sufficiency of cleaning supplies and equipment.

负责供应充足的清洁物品及相关设备.

Assigns specific tasks among the stewarding team.

分配管事部员工的具体工作.

Maintains and updates the e steward Operating manual, chemical charts and cleaning chart for team guidance.

保持和更新作为员工指导的管事部运作手册, 清洁剂表和清洁表.

Prepares and monitors the requisitions of all chemicals and equipment.

准备及监控清洁所需的药剂和设备.

Attends all scheduled meetings and training sessions required for the position.

参加各种职位所需的会议和培训.

Reports all accidents and incidents.

Conducts and prepares monthly operating equipment inventory.

准备和执行每个月部门设备的盘点.

Reports and monitors the Breakage and Loss report for operating equipment.

Prepares purchase requisition for operating equipment and cleaning supplies, below the par level.

Prepares an effective duty roster suitable for the volume of business.

根据营运情况合理安排员工工作时间.

Coordinates with the Executive Chef and F&B Manager in establishing minimum and maximum par stocks of all flatware, glassware, chinaware, utensils and related equipment.

与行政总厨, 餐饮部经理协调来确定所需物品, 器皿和设备最大和最小的库存量.

Coordinate with Engineering Dept. for the preventive maintenance system for exhaust, drainage, burners, fryers, refrigerator, freezers and other major equipment.

与工程部合作建立厨房排气排水系统, 炉灶, 油炸机, 雪柜, 冰箱和其他主要设备的清洁维修及保养的程序制度.

Communicates effectively with superiors, team, other F & B department heads & other department heads.

与上级, 员工, 餐饮部及其他部门的主管有效沟通和合作.

Administers personnel action, leave request, over time request, extra team, disciplinary action and commendation.

对管事部员工的个人事宜, 休假请求,超时要求, 人员多余, 纪律行为等进行管理.

Inspects all stewarding supplies and equipment received is according to the established specification.

按照已定的规范对所受到的管事部物品和设备进行检查.

Checks all areas of the kitchen, canteen, store rooms, fridges are up to the level of sanitation standard.

检查所有厨房区域, 员工餐厅, 库房, 雪柜等处的卫生是否达到酒店制定的卫生标准.

Checks daily that all kitchen equipment and cleaning equipment are in  safe and good working condition..

每天检查所有厨房设备和清洁设备确保安全及正常使用.

Coordinates the implementation of cleaning schedule with the Executive Chef in specific areas of the kitchen.

与行政总厨合作根据不同厨房的卫生要求执行已定的卫生清洁计划.

Conducts weekly sanitation inspections with the Executive chef and F&B Service Manager.

负责执行每周有行政总厨和餐饮部经理共同参加的卫生检查.

Updates & reviews cleaning products, purchase specifications and cleaning methods to ensure the highest possible standard at all times.

不断检查和更新清洁用品, 采购标准及清洁方法确保总是达到最高标准.

Gives direction and checks set-up of buffet set in the outlet and banquet functions.

指导和检查餐厅和宴会的自助餐摆台.

Provides active supervision during the implementation of cleaning schedules.

经常检查和督导已在实行的清洁计划.

Monitors the daily, weekly and monthly banquet functions, outlet promotions and activities, to plan for provision of equipment and manpower.

对每日, 每周及每个月的宴会活动, 餐厅和酒吧的推广活动及相关的事宜实施监控并为此准备好足够的人员和设备.

Acquires contact from various hotels in the City, to secure additional equipment for big functions and events.

与本市其他的酒店保持联络, 确保在大型的宴会和活动中能提供所需要的设备.

Knowledgeable on fire safety and security procedures in relation to stewarding operation.

具有与管事部相关的消防和安全的知识, 熟知其工作程序.

Knowledgeable of all job description in stewarding section, capable of performing the tasks as required.

熟知管事部全部职位的职责, 有能力完成所要求的工作.

Checks and maintains the sanitation level of the garbage room (wet and dry)

检查和保持垃圾房(干和湿)的卫生标准.

Coordinates with Finance and security in processing the disposal sale of pig slops.

协助财务部和保安部执行废物出售处置程序.

Checks and audits regularly the process of “Sorting” garbage.

审核和检查垃圾分类方法.

Coordinates with finance in processing the disposal sale for non-performing assets like unused equipment, chipped glassware, chinaware, etc.,

协助财务部对元用物品的出售, 如不用的设备等.

Interacts with individuals outside the hotel including, but not limited to, clients, suppliers, government officials, competitors & other members of the local community.

同客户,供应商,政府官员,竞争者和其它社团成员(但不仅于此)保持良好沟通。

Attends to specific guest and team needs and requirements.

留意客人的特殊要求和需要。

Motivates a strong team amongst the team in the stewarding section.

激励管事部员工工作, 成为强劲队伍。

Develops & implements training plan for the stewarding section.

建立和实施管事部员工的培训计划.

Conducts on the job training for stewarding supervisors and team.

主导管事部副经理和员工的业务培训.

Coaches, counsels and disciplines the stewarding supervisors and team in accordance to the Hotel’s Policies and Procedures.

教育和培训管事部副经理和员工遵守酒店的规章制度.

Participates in the interview, hiring and orientation of new employees for stewarding.

参加管事部新员工的面试, 雇用和入职培训.

Reports to the Executive Chef

向行政总厨汇报工作.

Coordinates with the Executive Chef and Outlet Managers/ Banquet Manager for equipment requirement and cleaning schedules.

协调行政总厨, 餐厅经理和宴会经理所提出的设备要求和清洁计划.

Coordinates with the Finance department for monthly and quarterly operating equipment inventory.

协助财务部的每月和每季度的进行的营运设备的盘点.

Coordinate with the Engineering department regarding preventive maintenance and repair of equipment.

协助工程部进行的设备维修和保养工作.

Coordinate with other department heads in Hotel activities.

Under the hotel policy, the steward supervisors may be sent on temporary assignment to any property properties of Hilton Hotel in China or overseas.
