职位描述

The executive chef of Chinese food is responsible for the daily operation of the Chinese food kitchen to ensure that the food, finished or semi-finished products in the restaurant maintain the consistent quality, taste and appearance. Provide high-quality food within the budget and guarantee profits. Plan to produce and manage and coordinate the work of chefs, cooks and other kitchen employees. At the same time, we must pay attention to competitors' food, price and quality.

中餐行政总厨要负责中餐所有厨房的日常操作确保饭店内食品成品或半成品保持一贯质量、口味及外观。在预算范围内提供高质量食品并保证利润。计划出品并管理、协调主厨、厨师及其他厨房员工的工作。同时也要关注竞争对手的食品、价格及质量。

   Supervise efficient, productive and profitable kitchen operations and ensure that high standards of food production and presentation are consistent throughout the hotel at all times.

提供高标准的服务并提出建议。保证高效率且有利润的厨房运作。负责厨房的运作。

·           Food Production 食品知识

Ø  Responsible for the quality of all food prepared in the kitchen supervises.  Constantly inspects taste, temperature and visual appeal.  make sure that all dishes are uniform and that established portion sizes are adhered to.

负责监督中餐厨房食品质量的准备、要不断的检查食品的味道、温度外观。

Ø  Is very careful to prevent the use of spoiled or contaminated products in any phase of food preparation and prevents associates who are ill or suffering from an infection from taking part in the preparation or handling of food.

确保所有的食品没有腐烂、变质时刻注意在提供食品时避免员工使用过期及肮脏食品。

Ø  Assist Executive Chef with the planning of menus and food promotions.

协助中餐行政总厨制定菜单及食品节。

Ø  Develop and test new dishes and products.

发展新菜肴和产品。

Ø  Ensure that outstanding special events and special food promotions are carried out.

确保优秀的烹饪技术不外传。

Ø  Controls standards of food production and presentation throughout the hotel.

控制食品出产的标准。

Ø  Examines goods for quality and quantity.

监测收货的食品质量和数量。

Ø  Insures that Chefs and Cooks follows standard recipes and methods of preparation.

控制厨师要按照配料卡标准及程序准备食品。

Ø  Informs the Executive Chef immediately of inferior quality products.

及时将变质食品拿出并通知行政总厨。

·           Approves food requisitions as needed.

必要时审批食品供求表。

·           Inspects the quality of food received.

检查收货食品的质量。

·           Oversees cooking in conformance with the hotel policies.

根据酒店的标准监督所有的烹饪。

Ø  Inspects method of food preparation and cooking. 检查食品的准备及烹饪

Ø  Sets and inspects sizes of portions. 检查部分食品的规格

Ø  Develop special dishes and create recipes. 生产特殊的食品及有创造性的配料。

·           Liaises with the Chief Steward to ensure all kitchens and equipment are maintained in a sanitary condition and adequate supply of operating equipment is always available.

同总管事共同监测确保所有厨房设备的卫生及所有设备的正常运作。

·           Liaise with F&B Service Managers, Outlet Managers and Banquet Manager on day-to-day requirements for specials buffet set ups, timing, VIP requirements and other operational requirements.

同餐饮服务经理、餐厅经理、宴会厅经理协商每天面临的特殊需求特殊自助餐台搭设、重要客人需求及其他运作部门需求设备。

·           Liaises with the Chief Engineer on day-to-day maintenance requirements and plans maintenance program for all kitchens.

同工程总监沟通有关所有厨房每天的设备维修。

·           Liaises with Banquet Manager on all special banquet menu requirements to ensure that it can be produced to a high standard within budget cost parameters.

同宴会厅经理协商有关特殊宴会必须在保证成本预算的基础上给客人提供高标准的食品。

·           Ensures that daily food preparation and cooking methods conform to standards and standard recipes

确保每天按照标准配料卡准备及烹饪食品。

 

Training and Human Resources

培训和人力资源

·           Ensure wherever possible that staffs are provided with a work place free of discrimination, harassment and victimisation

确保提供给员工们一个没有歧视、骚扰和危险的工作环境。

·           Treat customers and colleagues from all cultural groups with respect and sensitivity.

对待来自不同文化背景的客人和同事都应给予尊重和体贴

 

Professional Technical Responsibilities

专业技术责任

·           Excellent Chinese kitchen cooking knowledge, techniques and skills. Strong leadership and organizational abilities and must have Training accreditation

领导能力、组织能力及培训资格。

·           Good command of English and a good communicator.

具有良好的英语基础和良好的传达能力。

·           Minimum requirements-High school graduate

高中毕业。

·           Preferred – Completed Technical education in Hospitality or Culinary school.

最好是专业烹饪学校毕业。

·           At least has10 years kitchen experience in 5 Star Hotel and at least 5 yrs at supervisory level, with a minimum of 3 years as Chinese Executive chef

至少有10年以上五星酒店厨房管理工作经验并有8年中餐行政总厨经历。

 

GENERAL DUTIES:

一般职责

·           Abide by Hotel’s and Department’s policy & procedure.

遵守酒店及部门的各种规章制度。

·           Perform other related duties & special projects as assigned by the supervisor

随时执行上级分配的其他相关任务或特殊项目。

 

Health and Safety

健康与安全

·           Ensure that all potential and real Hazards are reported immediately and rectified

确保所有潜在的和实际的危险是被立即报告和纠正的。

·           Be fully conversant with all departmental Fire, Emergency procedures

熟悉各个部门的消防、紧急事件的处理程序。

·           Ensure that all emergency procedures are rehearsed, implemented and enforced to provide for the security and safety of guests and Staffs

为了客人们和员工们的安全必须确保所有的紧急程序都被预演、落实和实施。

·           Ensure the safety of the persons and the property of all within the premises by fairly applying Hotel Regulations by strict adherence to existing laws, statutes etc.

在公平的酒店规则和严格遵守的法律法规下确保在酒店内所有人的人生和财产安全。

·           Ensure all Staff within the department work in a manner which is safe and unlikely to give risk of harm or injury to selves or others

确保所有员工都在部门内以安全的方式操作避免不安全的或者不适合的冒险的行为造成自己或者其他工作人员的损伤或不便。

 

Confidentiality

·           Ensure confidentiality and secure storage of all intellectual property and data bases

确保保密和安全的存储所有知识产权和数据包括所有印刷品和电子软件。

·           Ensure Hotel, Customer and Staff Information or transactions are kept confidential during or after employment with the company. 

保证酒店、客户和员工的信息交易期间或在公司就业后信息保密。
