Prepare food according to working standard, material list, photos and instructions from superiors, assist Chinese sous chef to train staff. Participate in the improvement of food quality and ensure the smooth operation of the kitchen. All areas of the kitchen should be put to work when instructed. Assist staff management, assist staff development, participate in food quality control, improve food color and taste.
根据工作标准、备料单、照片及上级指示准备食物,协助中餐副厨师长培训员工。参与提高食品质量,保证厨房运作的顺利进行。当接到指示时厨房的所有区域都要进入工作状态。协助管理员工,为员工发展提供帮助,参与食物的质量控制,提高产品的菜色和味道。

Administration

· Must be completely responsible for the smooth and efficient operation of the area assigned to as per the following duties.
根据职责必须完全负责管理本部门的正常运作。
· Prepares food for guests and associates efficiently, economically, and hygienically as per the standard recipes following the standards and procedures
为客人和员工高效率的提供食物,做到物美价廉, 和按照标准食谱制作并且要符合食品卫生。
· Hands on supervision of work operations.
监督厨房的正常运作。
· Assist Chinese sous chef to manage the normal operation of the kitchen and ensure the high quality of food.
协助中餐副厨师长管理厨房的正常运作,保证食品的高质量。
· Support the Sous Chef in the overall smooth operation of the kitchen ensuring prompt service at all times.
在厨房运作方面支持厨师长工作,保证提供高效率的服务。
· Works in all areas of food preparation as and when directed.
管理并参与本部门的制作工作。
· Assists with Buffets decoration items and show pieces
协助自助餐的装饰和装饰品。
· Develops recipe cards and products.

· Participates in development of dishes for menu designs

· Ensure wherever possible that staffs are provided with a work place free of discrimination, harassment and victimisation

Professional Technical Responsibilities
专业技术责任
· Must have a good knowledge and understanding of Chinese cuisines
必须具备良好的中餐烹饪知识。
· Must be “hands on” and able to practice and demonstrate excellent technical kitchen skills.
必须具备非常好的传授厨房专业技能的能力。
· Minimum Requirements-High school graduate
高中毕业。
· Preferred – Completed Technical education in Hospitality or Culinary school.
最好是专业烹饪学校毕业。
· At least has 4 years Chinese kitchen experience in 5-star Hotel at supervisor level
至少有四年五星级酒店厨房管理的工作经验。
GENERAL DUTIES:

· Abide by Hotel’s and Department’s policy & procedure.

· Perform other related duties & special projects as assigned by the supervisor

Health and Safety

· Ensure that all potential and real Hazards are reported immediately and rectified
确保所有潜在的和实际的危险是被立即报告和纠正的。
· Be fully conversant with all departmental Fire, Emergency procedures
熟悉各个部门的消防、紧急事件的处理程序。
· Ensure that all emergency procedures are rehearsed, implemented and enforced to provide for the security and safety of guests and Staffs

· Ensure the safety of the persons and the property of all within the premises by fairly applying Hotel Regulations by strict adherence to existing laws, statutes etc.

· Ensure all Staff within the department work in a manner which is safe and unlikely to give risk of harm or injury to selves or others

· Ensure confidentiality and secure storage of all intellectual property and data bases

· Ensure Hotel, Customer and Staff Information or transactions are kept confidential during or after employment with the company.
