工成丁、丝、条、片、块、粒、末、泥、茸、球等形状。
5、掌握常用原料的上浆。
6、参加厨房部的业务培训课程。指导培训帮厨提高切配技能。
7、贯彻执行食品卫生法，保持工作区域的整洁卫生及食品原料的卫生。
