1. 参加部门例会，主持班会，了解每日接待、预定情况，并向下属传达；
2. 认真阅读交班记录，跟进上一班没有完成的各项工作任务；
3. 检查员工的出勤情况，合理安排员工的排班，分配员工工作，负责调配、督导员工的服务工作；
4. 检查员工的仪容仪表，确保所负责区域的服务用品充足，环境清洁卫生，餐厅布置美观；
5. 餐饮及宴会前，在餐饮部经理的指导下，做好宴会设计、现场布置、督导员工做好宴会前的摆台、清洁、服务用具等的准备工作；
6. 餐饮及宴会中，督导服务员及时按照客人的要求提供优质的服务，满足客人的特殊要求，对特殊客人要亲自服务；
7. 向客人推介食品、留意所负责区域内客人的动态，掌握点菜、上菜、清洁台面杂物、结帐等具体的服务环节；
8. 客人用餐后做好客人的结账及送客服务，主动询问客人的意见，收集意见后及时向餐厅经理汇报；
9. 餐饮及宴会结束后，清点厅房内物品及设施设备，检查各厅房的宴会收尾工作、卫生清洁状况，监督节能节源；
10. 协助餐厅经理对下属员工进行业务培训及沟通工作，反映员工工作意见；
11. 及时填写交班记录，以便下一个领班开展工作；
12. 补充各种用具及控制损坏情况；
13. 协助餐饮部经理做好对服务员的考评工作，开展相关业务培训，不断提高服务员的服务技能，做好餐厅人才的开发和培养；
完成领导交办的其他工作。
