根据食品安全风险差异建立年度微生物抽样检测计划。按计划对食品和餐具、手、食品加工台面等食品接触面抽样并实施微生物检测。
Establish annual microbiological sampling & test plan according to food safety risk difference. Conduct sampling inspection for food & food contact surface (i.e. utensil, hands, processing table) as planned and microbiological test.
根据国家卫生法规的要求组织相关人员对重要/大型聚会和宴席的食品留样。
Organize sampling for grant event according to national hygiene regulations.
督导食品安全巡查记录的完成情况和填写内容的质量。
Supervise the completion of food safety check record and the quality of content.
建立内部员工的食品安全培训计划制定培训教材组织并实施定期培训。
Establish an internal food safety training plan. Prepare training materials. Organize and deliver regular training.
对食源性疾病事件与行政总厨共同展开内部调查协助餐饮总监处理客人对食品卫生的投诉。
Conduct internal investigation with executive chef when there is a food borne illness event. Assist F&B Director to deal with guest complaint related to food hygiene.
协助采购部完成食品供应商评审。
Assist purchasing to complete food supplier assessment.
代表酒店作食品安全相关事务的对外和对内沟通。
Handle food safety related activity as the representative of the hotel and communicate internally and externally.
