工作职责：
1. 能够完成各类中式宴会凉菜的制作，包括但不限于冷拼、花色冷盘、酱卤制品、腌腊熟食及创意凉拌菜，确保造型美观、口味协调、出品稳定；
2. 严格遵守食品安全与操作规范，全程管控食材验收、储存、加工及出品温度；
3. 参与宴会菜单定制与凉菜档口动线设计，配合主厨完成节令菜品研发、成本核算及标准化作业流程落地；
4. 负责凉菜区域设备维护、工器具清洁消毒及环境日清日洁，确保符合餐饮服务食品安全等级评定要求；
5. 指导助理厨师进行基础刀工训练、酱料调制及摆盘辅助工作，协助开展岗位技能传帮带。
任职资格：
1. 中等职业教育学历（中专、技校或职高），烹饪工艺与营养、中西式烹调等相关专业优先；
2. 具备1年及以上星级酒店、高端餐饮或大型宴会中心凉菜岗位实操经验，熟悉宴会场景下冷菜出品节奏与质量标准；
3. 持有有效健康证，具备凉菜专项操作资质者优先；
4. 熟练掌握冷菜刀工技法（如片、丝、丁、卷、雕）、酱卤腌制工艺、花色冷拼构图及常见凉菜调味体系（咸鲜、酸辣、酱香、藤椒等）；
5. 具备较强的细节把控力、卫生执行意识与团队协作能力，能适应高强度宴会期工作节奏及弹性排班安排。
