岗位职责/职位描述

基础职能

1.To ensure that all Government, Corporate and International standards in relation to food hygiene, food production and overall cleanliness and sanitation levels of F&B areas, are implemented and consistently achieved.

确保食物达到政府和国际一流的标准,确保食物制做、清洁和卫生设施的水平。

2.To develop departmental SOP and Hygiene Manual, communicating and training all involved employees in line with recognized Food Safety Standard Procedures.

制定部门的卫生手册,按照食品卫生标准去培训相关的员工。

3.The Job incumbent works in line with the hotels guidelines and business plan.

工作的职责是符合酒店的指导方针和商业计划。


工作职责


1.Carry out comprehensive audit of existing practices and procedures in place, documenting and communicating results to the Executive Chef, Hotel Manager, Director Food & Beverage Manager  and Chief Engineer.

对环境、文档进行全面的例行检查,并及时与行政总厨、酒店经理、餐饮总监和总工程师汇报沟通。

2.Liaise with Local Ministry of Health to clarify and document all requirements and standard pertaining to food hygiene.

与当地的卫生部门联系,弄清与食品卫生相关的所有要求和标准。

3.Document and recommend changes required to operating procedures, work practices, suppliers contracts, equipment, preventative maintenance programs, capital investment and employee

4.awareness and training.

了解必要的工作方法、操作程序、供应商合同、预防维护程序、资金总额和培训员工,增强卫生知识。

 

5.Develop Brand Standard Operating Procedures for all departments in relation to food hygiene and cleaning standards in line with Food Safety Standard - F&B production, Stewarding, Purchasing & Receiving, Engineering and F&B service.

为所有与食品卫生相关的部门发扬具有品牌标准的操作程序、符合食品卫生标准的清洁标准

(包括餐饮部的运作、管事部、采购部、收货部、工程部和餐饮服务)。

 

6.Provide feedback and progress update with Executive Chef and Director Food & Beverage Manager on a daily basis, scheduling and chairing formal “Hygiene Meeting” once week for all concerned Management and F&B employees.

每天向餐饮总监和行政总厨反馈汇报、更新进程;对于所有相关的经理和餐饮部员工召开每星期一次的卫生会议。

 

7.With the assistance of Human Resources develop, schedule and run regular training sessions for all concerned employees.

配合人事部的进展、日程,对所有相关的员工进行培训。

 

8.With the assistance of the Human Resources department, increase employee awareness of hygiene and cleanliness requirements using creative and stimulating methods – posters, competitions etc.

配合人事部增强员工的卫生意识、有效地清洁设备(例如张贴海报、竞赛等)。
