PURPOSE OF ROLE
Planning, organizing, coordinating, staffing, directing, controlling and evaluating all operations under his/her responsibility. One must develop long range plans while resolving daily challenges across the entire spectrum of the Department. Thoroughly understand the basic principles of each component of the Management System for Food and Beverage Operations. Assists with the preparation and regular update of the Food and Beverage Departmental Budget, in close cooperation with the Executive Chef, ensuring targets are met and costs are effectively controlled. In the absence of the Executive Chef, represents Kitchen on the Hotel Leadership Committee, ensures the efficient and smooth operation of the Kitchen Department providing services and support to other Divisions as required.
WHAT YOU WILL DO?
- Supervise culinary preparation shift operations and ensure compliance with all Food & Beverage Standards, Policies and Procedures.
- Ensure all managers and KHOS Employee follow all job safety regulations and all hazards are reported to Security Department and Engineering Department.
- Participate in training staff on menu items including ingredients, preparation methods and unique tastes.
- Train KHOS Employee in safety procedures and supervise their abilities to follow Security Policies to prevent accidents and control costs.
- Interact with guests/customers, community, Company representatives, vendors and local education systems as needed.
- Enforce the KHOS SHENYANG Hotel food preparation and presentation guidelines to ensure consistent quality culinary offerings to our guests.
- Ensure the Hotel delivers to guests: “Simply Fresh Chef-crafted Food”.
- Maintain F&B concepts and Mission standards concerning preparation & presentation.
- Carry a monthly self-inspection and make sure the Department is compliant with the Brand Standard Guidelines.
- FSMS Management, recognizes the importance of providing safe food to customers, KHOS Employee and visitors.
