Executive Sous Chef-Resort  行政副总厨-酒店


Job Summary 

职位简述 

He/she will lead, manage and organize all requirements for Culinary kitchen to the highest standards and in accordance to the
standard operating procedures as implemented by the Vice President Culinary. He/she will ensure proper hygiene and sanitation in
the work place under his jurisdiction, adequate stocks of working materials, inter–department coordination and training. He/she will
carry the full responsibility of the operating equipment including its inventory levels. He/she is directly accountable for the smooth
operation of all kitchen. He/she will develop realistic action plans aimed to introduce and/or improve service, procedures and
working methods. He/she will communicate with the guests and share feedbacks with the chefs and the management. The
feedbacks then will ensure high levels of food and service quality and guest satisfactions are maintained at all times. He/she has to
maintain an excellent reputation in the eyes of the public, owners, management, guest and staff. He/she will abide with the
instructions and laws issued by the Chinese authorities and company’s set standards whichever is higher in connection to food
handling, hygiene and food storage. 

根据厨房副总裁批准的标准操作流程来领导、管理并组织厨房的工作达到最高标准。管理厨房员工严格遵守厨房食品安全卫生程序,
确保布菲台上食物充足,务必做到能同部门内部高效沟通并参与培训。对厨房的设施设备负有全部责任,包括对其的盘点。对厨房整
体运作直接负责。确保时刻控制食品成本,通过指导、监督和激励厨房员工来将服务质量提升至最高水平。与客人交流并向当班厨房
负责人及管理层反馈客人意见,该反馈意见会不断提高食品及服务质量和顾客满意度。必须在公众眼中、业主、酒店管理层、顾客及
员工中享有较高声誉。关于食品操作、卫生及储存等问题必须遵守中国法律法规、食品卫生安全要求及酒店相关规定。

主要义务和职责

•To ensure that the quality levels of kitchen production and presentation is maintained at its highest level at all times 

确保厨房的食品质量及出品时刻保持最高水准

•To monitor systematically the performance of the department and intervenes immediately if deviations occur 

系统上监督餐饮出品部的整体运作,当出现问题时需立即干预

•To ensure and enforce the set service standard procedures by directing, supervising and motivating staff to perform to the
highest level of service 

通过指导、监督和激励员工来确保他们的工作达到最高效率,为客人提供最优质的服务

•He/she will liaise and coordinated with the Food & Beverage Directors/Managers for outlets and function promotions and
actions
同餐饮服务部总监/经理联络协调完成各餐厅、宴会及促销活动等的相关工作 

•To attend the daily Department Head meeting 

参加每天各部门领导例会

•To ensure menus are updated and seasonal changes are made in conjunction with the menu cycles 

确保菜单及时更新并有季节性变化

•To ensure all recipe manuals are updated as menus are changed and prices are engineered to ensure no deviation in Resort Food Cost 

确保当菜单更新时所有的食谱在系统中也相应更新,从而确保酒店食品成本系统准确计算成本

•To participate in the service of any special functions or events organized by the resort. 

积极为酒店内的特殊活动及宴会提供服务

•To coordinates functions and activities with the F&B department. 

同餐饮服务部协调沟通酒店的各项活动及宴会等

•To establishes and maintains smooth work relationships in the kitchen. 

在厨房团队内建立并保持良好的个人及工作关系

•To ensure the outlet food cost is maintained at all times. 

确保时刻控制本厨房食品成本

•To conduct regular checks on all food product for any expired item.
定期检查本厨房内有无任何过期食品

•To ensure every food product are label according as required by the hygiene and sanitation policy 

确保日期等食品标签根据食品安全卫生等相关规定准确标识在食品上

 •To ensure that equipment is cleaned, when necessary or according to their schedules. 

确保厨房设备在需要时或根据时表进行清洁

•To supervise the undertaking of physical asset inventories on scheduled month. 

监督月度固定资产的盘点

•To conduct performance appraisals for kitchen employee 

指导厨房员工完成绩效考评

•To assist in the process of recruiting new employee for the respective kitchen 

协助各厨房招聘新员工

•To organize and coordinate special functions and events 

组织并协调特殊活动及宴会等

•To continuously train and motivate all subordinates to ensure resorts standards are maintained. 

不断培训并激励所有下属,确保他们遵守酒店相关程序和制度


Skills, Experience & Educational Requirements 

技能、经验及教育背景要求 

• Diploma or equivalent in catering/ Hotel Management 餐饮厨房/酒管理相关资格证书 

• Computer training 计算机培训

• First Ai 急救培训 

• Advanced Hygiene certificate 高级食品安全卫生证书
