Primary Objective of the Position:

Responsible for overall quality and quantity of Chinese food items served in in the hotel.

Tasks, Duties and Responsibilities:

Supervises and responsible for all food items produced in Chinese Kitchen.

Ensures that all equipment and machinery is in working order and operated safely. according to its intended use and reports deficiencies.

Checks kitchen, fridges and storage areas for cleanliness and sanitation and initiates corrective measures.

Ensures that Chinese Kitchen operates within hygienic standards.

Responsible for smooth outflow of food during daily service and Banquet.

Inform staff on daily activities Insures adequate stock levels.

Establishes menus and recipes as requested.

Reports any suspicious and dangerous situations to Engineering and Stewarding.

Liaise and support operations in the Chinese Kitchen, Banquet area and Cafe Marco Buffet.

Responsible for training and cross training of Chinese kitchen employees.

Ensures that all reporting staff are fully aware of market and customers’ needs and that the product meets their requirement.

Actively involved in the success of scheduled promotions.

Checks all requisitions and Kitchen transfer.

Attends all F & B meetings.

Co-ordinates special events and promotions with F & B and Public Relations Department.
