1.To ensure that Sous Chefs are maximizing employee productivity to minimize payroll costs.

2.To assist each Sous Chef with the preparation of annual operating budgets this will form part of the Business Plan.

协助各厨师长准备年度运作预算以形成商业计划。

3.To monitor all kitchen related costs and recommend changes to each of the Sous Chef where appropriate.

4.To ensure that all outlet kitchens adhere to Company and Hotel Policies and Procedures and Minimum Standards.

5.To keep the Sous Chefs up to date with seasonally available meats, fish and produce on the local market.
