西厨主厨职责：
1-负责西厨房的日常工作管理，督导各操作点的厨师按工作规范开展菜品的安全生产，不断提高菜品的质量和客人对菜品的满意度。
2-西厨厨房的运营管理：
1-制作西餐餐牌以及各宴会，鸡尾酒，自助餐餐单，
2-根据餐厅的运营情况，制定西厨房的采购清单，
3-制作西厨房的工作流程和各菜式的制作规范和程序。
3-西厨房的菜品管理；
1-负责安排厨房的菜品生产，监督，检查出品的质量和份量，
2- 督导加工房与切配，冷厨房，热菜房厨师按照标准规范进行菜品的加工生产，
3- 合理安排各操作点的日常工作，确保厨房可以正常运作。
4-西厨房的成本费用控制；
1-每天严格审核厨房原材料，食品的合理申购，采购和领取，
2- 监督各岗位的用料标准，杜绝铺张浪费，，
3-监督各岗位人员对设施设备的安全使用，以及保养，维护以降低维修概率成本，
5- 督导各厨房人员对工作岗位环境卫生保持干净，整洁，餐具用具保持整齐干净摆放美观，
6-对下属员工多培训，多帮助，多教导，多沟通。
