· To monitor consumption & purchasing of food and beverage throughout the Hotel and make recommendations to improve profit margins. Ensure food and beverage items are accurately recorded and securely stored. Perform month end close process for food and beverage items.

Duties and Responsibilities工作职责

· To ensure that all the goods purchased by the hotels are checked and accepted by the Department;

· Arrange the staff to check the warehouse and receiving department, ensure the system and procedures are in accordance with the system
· 安排员工对酒店仓库和收货部门进行检查;确保收发存都符合制度与程序。
· Conduct market research with purchasing manager and chef, coordinate with the food and beverage department in respect of cost issues
· 与采购经理和总厨合作进行市场调查;就有关成本事宜与餐饮部门进行协调
· Establish par stock levels for outlet beverage stocks and carry out quarterly spot checks.
· 建立各餐厅的酒水标准存货量并每季度进行抽查。
· Supervision department of operating assets and fixed assets management is in accordance with the requirements of the system; once every three months to porcelain, glassware, silverware and so on inventory, the hotel low value consumable items and fixed assets annually for at least an inventory, and by issued inventory report
· 监督酒店使用部门对运营资产和固定资产的管理是否符合制度要求;对瓷器,玻璃器皿,银器等进行3个月一次的盘点,对酒店低值易耗物品和固定资产进行每年至少一次盘点,并出具盘点报告。
· Monitor the inventory of the hotels, and timely warning; recommended to improve the control of waste and loss of methods and measures to investigate the cause of deterioration and waste
· 监控酒店积压存货,并及时报警提醒;推荐改善控制浪费和损耗的方法和措施,调查损坏变质以及浪费的原因。
· Cooperation with the Hotel Executive Chef for standard recipe cost calculation. And according to the system generated reports for sales analysis
· 与酒店行政总厨合作,开展标准食谱配料成本计算。并根据系统生成的报表进行销售分析。
· Assist with costing of special events for F&B Department.
· 帮助餐饮部计算特殊宴会活动的成本。
· To prepare and analyze monthly Minibar Beverage Revenue potentials
· 准备和分析每月小酒吧潜在的酒水收入。
· Assess & communicate the popularity of each item on the menu of each outlet on a quarterly basis and make recommendations for margin improvement.
· 每季度评定和沟通各菜品受欢迎的情况,并建议如何提高利润。
· Assist Food & Beverage department in menu planning by means of costing, portion sizes, recipes, standardized menu, item presentation to ensure food cost objectives are met.
· 协助餐饮部设计菜单,包括成本核算、份额大小、配料、标准菜单、摆台,确保满足食物成本控制目标。
· To assist in carrying out the cost control system, without sacrificing the quality of the products, by reducing waste and other losses, to avoid excessive costs. Help identify the reasons for the problems occurring in the catering business as early as possible so as to solve the problem before the problem becomes more serious
· 协助贯彻执行成本控制体系,在不牺牲产品质量的前提下,通过减少浪费和其他损耗,避免成本过高。帮助尽早鉴别在餐饮营运中所发生问题的原因,以便在问题变得严重之前解决好。
· According to the request of other department manager or compound financial controller, the cost evaluation is provided and the main cost items are analysed
