    岗位职责/职位描述

    SUMMARY摘要:

    Supervise the function of all kitchen employees, facilities and costs, hence contributes to maximizing the overall Food & Beverage department profit.

    Report directly to the General Manager.

    Supervise directly the Kitchen Chef de partie as well as his subordinates.

    DUTIES AND RESPONSIBILITIES职责及任务:

    OPERATIONAL 运作职责

    Responsible for the production, preparation and presentation of all food items, to ensure highest quality at all times. 负责本部所有食品的准备、烹饪、装饰,并确保达到质量标准

    Control and analyses on a on-going basis the following: 控制并分析以下各项:

    Quality levels of production and presentation. 饭菜质量及外观

    Guest satisfaction. 客人满意度

    Merchandising and Marketing. 销售及促销

    Operating food cost. 食品成本

    Cleanliness, sanitation, hygiene. 干净、卫生、清洁

    ADMINISTRATION 行政管理

    Is responsible for the preparation of menus taking into consideration the following: -

    Market needs市场需求

    Competition竞争情况

    Trends趋势

    Potential costs潜在成本

    Availability of food products货源情况

    Merchandising and promotion销售及促销

    Inspects perishable food items received for quality control. 检查所收货物的品质

    Passes onto the Purchasing Manager his daily market list requirements.

    送交采购部每天所需的采购单

    Produces up-to-date standard recipe file for all food items listed on the menus, to include:

    Sales history销售记录

    Actual cost实际成本

    Production time出品时间

    Picture of the finished product成品照片

    Performs related duties and special projects as assigned. 完成布置的其它工作

     

    EMPLOYEE HANDLING 员工管理

    Establish and maintains effective employee relations in his section. 建立并保持良好员工关系

    Conduct such functions as interviewing, hiring, employee orientation, performance appraisal, coaching, counseling, and suspension if necessary, to ensure appropriate staffing and productivity.

    负责面试,聘用人员,使员工熟悉饭店,进行表扬、培训、劝告、停职的工作

    Develop formal training plans and conducts on the job training sessions for kitchen employees.

    制定正式的培训计划及在工作中进行培训

     

    GUEST SERVICE宾客服务

    Attend to specific guests as required. 关注客人的要求

    Interact with individuals outside the hotel including but not limited to, clients, suppliers, government officials, competitors and other members of the local community.

    根据要求,会见饭店外的客人、供货商、政府官员、同行及其他人员。

     

    PRODUCT出品

    Responsible for the production, preparation and presentation of all food items, to ensure highest quality at all times. 负责本部所有食品的准备、烹饪、装饰,并确保达到质量标准

    Execute inspections of physical aspect the food preparation areas.

    检查工作区卫生情况。

    GENERAL 总体概述

    Provide functional assistance and direction to the kitchen operation. 指导、协调厨房工作

    Supervise directly the Chef De Partie as well as his subordinates.

    Coordinate functions and activities with other Food & Beverage Departments.

    在宴会及其它活动中,要与其它各部协调好关系

    Maintain interdepartmental working relationships.

    保持部门之间良好的工作关系。
