1. 了解营业情况，熟悉菜单，明确当日工作任务。
2. 负责每日冰箱及案板工作柜中的库存数量和质量，准确申订原料并充分利用剩余原料。
3. 领取并涨发干货原料，努力提高涨发质量和涨发率，保证有一定的库存量。
4. 及时领取各种原料，备齐各种配菜盘和主配料，切制料头，做好开餐准备。
5. 有效控制成本，准确配份，并保证出品速度,每道菜的主副料应按规定的比例及重量配制不得过多或过少，蔬菜的数量要足，决不允许偷工减料。
6. 切配时，应注意菜的新鲜度，对于海鲜、河鲜不能用的应及时处理，不允许再配出去，以免贪小失大，损害本店名誉。

7、营业结束时应搞好自己的卫生包干区负责冰箱、冰筐的员工应每天清理冰箱一次，生.、熟、半成品，按卫生规定存放，不得擅自乱放。
8、定期检查，整理冰箱、冷库，保持原料存放整齐和质量完好。
9、随时保持个人和工作岗位及包干区的卫生整洁。
10、正确使用和维护器械设备及用具，保持完好清洁。
11、完成厨师长交办的其他工作。
