A Senior Manager, Food & Beverage Operations, Greater China and Mongolia as one of the regional F&B team members and responsible for F&B service and culinary operations in Greater China & Mongolia which including trading hotels and pre-opening hotels. Position oversees the development and implementation of regional F&B operation’s strategies and ensures implementation of the brand service strategy and regional initiatives. The position ensures the hotels’ F&B service and culinary operation meet the brand’s target customer needs, and focuses on growing revenues and maximizing the financial performance of food and beverage across the region. Meanwhile, the position is responsible for the pre-opening hotel’s F&B design and concept direction consultant, offers suggestion and solution to the pre-opening hotel’s F&B operations. As a member of the regional corporate F&B operations, develops and implements regional strategies that deliver products and services to meet or exceed the needs and expectations of the brand’s target customer and provides a return on investment to the owner and Hilton Worldwide.
What will I be doing?
Developing and maintaining F&B Service & Culinary Operational Strategy Across the Brand:
-Works with hotel food and beverage leadership team to determine areas of concern and develops strategies to improve the regional F&B financial performance.
-Develops regional food and beverage operating strategy that is aligned with the brand's business strategy and leads on the F&B promotions.
--Identifies key drivers of business success and keeps team focused on the critical points to achieve target.
-Monitor food & beverage leadership team to effectively manage food & beverage cost and controllable expenses. Focuses on maintaining profit margins without compromising guest or team members satisfaction
-Reviews overall customer feedback via SALT, social platform and all other channels with F&B team and ensures appropriate & necessary suggestion given to the relevant hotels.
-Ensures brand and regional business initiatives are implemented and communicates follow-up actions to team as necessary.
-Work within budgeted guidelines in relation to Food, Liquor Costs and Payroll
-Leads Food and Beverage Service/Culinary team to comply with all brand standards across the brands, across the region.
-Stays aware of regional market trends and introduces new food and beverage products to meet or exceed customer expectations, generate increased revenue and ensure a competitive position in the market across the brand and across the region.
-Uses regional database to analysis, attract accurate guest segments, and increase market share.
-Strives to improve the regional F&B service performance and F&B products’ quality.
-Ensures compliance of food handling and sanitation standards meet company and government requirements across the brand and across the region.
-Conduct necessary hotel F&B operations & business review.Leading the hotel F&B Service & Culinary Teams
-Developing and building teams - encouraging and building mutual trust, respect, and cooperation among all hotel F&B leaders
-Creates appropriate development plans and develops F&B leaders based on their individual strengths, development needs, career aspirations and abilities.
-Celebrates successes and publicly recognizes the contributions of the hotel F&B leaders
ensures recognition occurs in all areas.
-Ensures new hires participate in the department’s orientation program and receive the appropriate new hire training to successfully perform their job. Ensures the hotel F&B leaders are well trained to support successful daily operations.
-Utilizes hotel F&B leader’s feedback and a transparent policy to identify and address associate problems or concerns in a timely manner. Brings issues to the attention of Corporate Human Resources as necessary.
-Ensuring Communication of Corporate Expectations and Objectives - Ensuring that expectations and objectives are clearly communicated to subordinates
subordinates are also open to raise questions and/or concerns.Ensure Exceptional Customer Service
-Identify areas of improvement. Reviews findings with F&B and culinary team and ensures appropriate corrective action is taken
shares plans with corporate operations senior leadership.
-Guide the hotel leadership team to provide excellent guest service across the region.
-Improving services by communicating and assisting the hotel F&B leadership team to understand guest needs, providing guidance, feedback, and individual coaching to the hotel F&B leadership team when needed.Work on the Pre-opening Hotels
-Effectively working with relevant parties for the pre-opening hotels, such as corporate development , corporate technique service support, corporate pre-opening human resource, corporate pre-opening team and hotel operations team for all the pre-opening standard and procedure.
--Is able to work with the external third party: hotel interior designer, kitchen consultant, kitchen contractor to ensure the hotels' F&B opening on time and on brand.
-Set up and constantly review the hotel’s pre-opening critical path and time line
-Effectively communicate with the pre-opening hotel’s owning company for all the F&B pre-opening matters

--Extensive knowledge of Banquet &Catering, Restaurant, Bar/Lounge, Room Service and Kitchen operational procedures, F&B design, F&B concept and pre-opening standard and procedure.
-Knowledge of food & beverage local laws
food handling standards, global and local hygiene requirements and safety and sanitation audits
-Knowledge of local governmental regulations and relevant global company standard & policy
