岗位职责
1、掌握拉面的制作技术,负责制作各种拉面及配料,掌握各种拉面的风味。
2、负责内部日常所用原料的领用,协助制定采购计划。
3、严格执行食品卫生法则,把好质量关,搞好本区域卫生,要求工具清洁,摆放整齐。
4、掌握食品成本核算,协助厨师长制定供应的售价以及毛利率核算。
5、合理使用原材料,降低成本以便酒店获得最佳效益。
6、该职位只负责意大利零点餐厅每日早餐拉面及北京面食的制作。
岗位要求
1、 相关岗位工作经验。
2、 熟悉餐饮的相关知识及礼仪。
3、 熟练拉面级北京面食制作工艺及高超技能。
