MAJOR FUNCTION：
to assist Direct of Operation and responsible for the overall administration and operational matters in connection with the provision of food and beverage supplies and service within the hotel and to ensure the maximum possible revenue are attained to meet the forecasted and budgeted figures. Analyses operation costs and make improvements in service procedures

MAJOR RESPONIBILITIES：
Responsible for planning , implementing, monitoring and controlling of the F&B operation. participate in market planning and implementation of approved promotional and marketing plans
Perform budgetary and cost control functions of the F&B department. Provide managerial supervision to all F&B employees. Plan and control inventory levels

SPECIFIC DUTIES：
1.To assist and ensure achievement of department’s set profit objectives
-Operate the department within the budget
-Submit financial and operational reports with analysis and comments as required
-Develop and prepare forecasts for all operating revenue and expense
2.maximize revenue
-ensure to assist DOO implement marketing and sales programs in coordination with sales personnel such as promoting special menu item, etc
-to assist DOO in co-ordination with appropriate personnel, plans and strategies for selling food and beverage such as new menu, special offer, and promotional
3.minimize food costs
-decide on the pricing of items
-follow up and maintain food cost control methods& procedures
-ensure purchase of the highest quality F/B supplies at the lowest possible cost
 -by co-ordinating with other related department
4.ensure proper administration of the department
 -administer internal system and procedures
 -ensure understanding and compliance with hotel’s house rules and internal regulations by associates
5.ensure operational efficiency of the department
 -monitor the functioning of various outlets
 -provide direction to key subordibnates
 -resolve operational problems as required
 -ensure compliance with se policies, systems and procedures
 -evaluate associates performance
 -co-ordinate with different sections of F/B and other       department
