Essential Duties and Responsibilities 基本职责与责任
· Manages and supervises the functioning of all kitchen employees, facilities the culinary operations with attention to costs and health and safety to ensure maximum Food and Beverage departmental profit is achieved.
管理和监督全厨房职工的运作,烹调设备的运作 并且注意成本和健康与安全问题,确保餐饮部能得到最大的利润。
· Manages and assumes responsibility in the production, prepareation and presentation of all food items to ensure highest quality at all times. Develops food concepts and enhances menu engineering. Plans and produces daily/weekly and or any specific related specials.
有责任并且管理好所有食品的准备,推出以确保每次的都是一流的。 建立食品的概念和提高菜单的设计并且计划和制作每天,每星期的特别套餐。
· Participate in the planning and costing of menus
参加菜单的计划和开支
· Develop and write standard recipes
创造一流的菜谱
· Develop new dishes and products
发展新菜品
· Ensure that outstanding culinary technical skills are maintained
确保具有出色的烹饪技术
· Assist with organizing special events and special food promotions
协助组织特殊的活动和特色食品的促销
· Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations accordingly

· Maintain a hygienic kitchen
