Scope of Position
The AssistantDirector of Food andBeverage is responsible for the overall daily Food and Beverage operation,budgeting, maintenance of quality standards, training and reviews of allcolleagues.
Organisational Structure
TheAssistant F&B Director/ F&B Manager will report directly to theDirector of Food and Beverage
Dutiesand Supporting Responsibilities
1. GeneralKnowledge
· Tohave complete knowledge on the food/ beverage/service available in all F&B sections.
· Ensurethat MOHG standards and policies are explained to staff, correctly applied and adheredto at all times.
2.Operations
· Monitorand ensure smooth operations of F&B sections.
· Effectiveparticipation in co-ordinating and controlling departments
· Conductsregular tours of front and back of F&B operations to check on set-up /service / food quality / general maintenance / cleanliness
· Recommendsimprovements in all aspects of F&B areas within the resort.
3. FLHSS(safe and sound)FLHSS
· Ensurethat all outlet colleagues are consistently trained on and adhere to, all FLHSSpolicies and procedures
· Ensureall colleagues are fully aware of all Business Continuity Procedures relevantto the appointed section.
4.Marketing and Planning
· Conductmarket surveys as required and plan / implement appropriate measures toincrease market share.
· Tobrainstorm / keep updated on new technology to improve work efficiency
· Co-ordinatewith the Executive Chef / Outlet Managers on the set-up, implementation andsales of all outlet promotions and menu planning
· Inconjunction with Outlet Managers/ Executive / Head Chef, to establish standardrecipes / specifications sheet and theoretical sales prices for food andbeverage services in sections appointed.
· Towork closely with beverage suppliers to instigate revenue generating promotionwithin the resort.
5. Staffing/Training
· Participatein effective staff management (staff hiring / termination / transfers /overtime)
· Approveweekly staff roster
· Enforcestaff motivation and team building
· Participatein divisional staff training / orientation (co-ordinated by F&B trainer)
· Observesstaff individual performance / grooming / punctuality, and performs staffappraisals / disciplinary actions if required
· Ensurethat the staff are equipped with proper working environment / tools / knowledgeto enable them to be productive and efficient in their work
· Ensureapplication of procedures and regulations to staff concerning hygiene andsanitation / fire and safety / emergency procedures
6.Communications
· Maintainsregular guest contact to obtain feedback / create future and potential clients
· Properand tactful handling of verbal and written complaints from guests and respondto guest critique forms.
· Conduct/ attend F&B divisional and departmental meetings as required
· Ensuresmooth and effective communication between F&B and other departments in thehotel
· Meetingregularly with key suppliers to discuss new products, flaws in existingproducts, maximise discounts, sponsorships
7. QualityControl
· Ensurethat quality of food / beverage / service provided are consistently maintained
· Ensurethat all materials, equipment and machinery are properly used and regularlycleaned, in order to prolong usage
8. CostControl / Planning
· Effectiveparticipating and control in inventory taking / costs / breakages.
· Approvesfood / beverage / general requisitions.
· Assistthe Director of Food & Beverage / Manager in the planning of budget /forecast / CAPEX / P&L for the division
· Implementappropriate and effective measures to improve control of costs / expenses /labour
9.Administration
· Preparethe F&B Division Report on a monthly basis (if applicable)
· Responsiblefor the implementation and upkeep of the systems for compilation of guestcritique / business cards / guest letters.
· Authorizethe daily outlet log book.
The Other Requirments:
· Having the experience in the international hotelsbrand is prefer, and at least one year same position experience.
· Good English communication.
· Good at the leadership competencies, including customerfocus, business acumen, drive for result, development others, problem solving, andprocess management, etc.
· Willing to be table and growing with MandarinOriental Hotels Group.
