1.直接负责厨房卫生设施，存储和自助餐区域。
2.监督管理盘碟存放间的轮班运转操作并确保与餐饮部的相关政策，标准，程序 相一致，确保所有操作符合政府法律法规。
3.管理所有设备，瓷器，玻璃器皿，镀银器皿并确保有其负责清洁的供应商。
4.熟知并对所有服务器皿，设备，地板等清洁程序严格正确执行。
5.针对宴会厅，餐厅，客房送餐及员工餐厅执行正确适当的破损程序。
6.对瓷器，玻璃器皿和银器皿定期盘点管理。
7.根据部门预算采购适当量的所需品及做好盘点工作。
8.确保清洁标准符合酒店品牌标准。
9.了解并执行卫生及安全标准。
10.执行贯彻部门培训计划，确保给部门员工关于卫生，设备操作及化学品的使用相关的培训
合理有效安排部门主管及员工的排班。
