In cooperation with the Executive Chef, within the limits of established policies, procedure and F/B recipes oversee and direct all aspects of Western Kitchen and Banquets operation.
按酒店和主管的要求，配合西厨总厨负责西厨房的管理，根据主管的要求准备充足的原料，以确保工作顺利进行和出品质量符合酒店要求。
Assist executive chef and supervisor to make and carry out the kitchen policy and procedure, ensure the western kitchen and banquet run smoothly. 
配合行政总厨/西厨总厨制订厨房的各项制度，政策和程序，并贯彻执行，确保西厨与宴会各方面的正常运作。
Ensure the food hygiene and follow the hygiene system of hotel and country.
严格执行国家和酒店的各项制度，确保食品的卫生。
Responsible for the preparation, production, presentation of all dishes and ensures highest quality at all times.
负责所有西餐的准备、烹饪及装饰工作，以达到最高的质量标准。
Supervise the function of all Western/ Banquet Kitchen employees, facilities, and cost, hence contributing to maximizing the overall F/B department profit and Staff Cafeteria.
监督所有西厨房、宴会厨房员工的工作，控制所有设施及成本，注意节约，尽可能增加餐饮部的利润。
Have knowledge of all cooking ingredients, techniques, preparation and equipment in his sections.
清楚所有食品的配料、技巧、烹饪方法及设备等方面的知识。
Perform related duties & special projects as assigned.
负责及完成上级布置的工等。
