1. 每日早班先检查炉蒸柜、汤炉等设备完好情况；
2. 先开汤炉加水烧开水，再去洗米蒸饭，完后，再去切配汤料烧汤；
3. 饭蒸好要软硬适中可口，汤要可口有味，汤料内容要丰富；
4. 每日保证米饭、汤保质、保量及时供应；
5. 及时对汤，米饭进行添加，保证粗粮、馒头等保质、保量供应，对所出食品卫生要严格把关，妥善保管严防污染；
6. 对蒸柜等设备进行卫生情况保养维护，对所属区域墙面，地面卫生进行清洁；
7. 剩余食品分类分盛放密封冷藏贮存，对热的食品需凉透再储存，对食品剩余情况要有记录
8. 上报，第二天合理加工后再使用。
