职位描述

厨房主管在副厨师长/厨师长缺席的时候，在他分配的区域进行领导，并负责根据提供的标准流畅的运作。
厨房主管负责理解，实施，培训和加强他的直接报告人员，丽思卡尔顿酒店，北京丽思卡尔顿酒店和行政总厨设定的目标，标准和要求。
厨房主管给予指导，提供给他的绅士&淑女在菜谱，菜单变动，食品卫生标准，还有工作技能上的培训。厨房主管在他被分配的厨房的所有部分都可以很好的执行任务。
厨房主管确保被他分配到任务的人总是在使用规定的产品，且遵循经过验证的流程，并以清洁，安全和有效的方式执行此操作。
厨房主管负责管理现有的部门库存，整合其团队成员的请购单，并将它们提供给副厨师长/厨师长进行采购。
厨房主管了解采购产品的设定标准，收货，储存并遵循基本的存放规则。厨房主管确保所有的物品都有覆盖物，有标签和注明了日期。
厨房主管领导每日试菜，创建被要求的记录，并用这个机会来与团队分享他的知识。厨房主管提供所需要的信息给到他指定的前场团队。

The Chef de Partie, in the absence of the Chef de Cuisine / Sous Chef,in his assigned area takes the lead and is responsible for the smooth runningof the operation in accordance with the provided standards.
The Chef de Partie is understanding, implementing, trainingand enforcing the goals, standards and requirements set his direct report, TheRitz-Carlton Hotel Company, The Ritz-Carlton, Beijing and the Executive Chef.。
The Chef de Partie gives guidance, providestraining to his fellow Ladies & Gentlemen on Recipes, Menu changes, hygienestandards as well as on the job skill training. The Chef de Partie can performtasks on all stations in his assigned kitchen.
The Chef de Partie ensures his assignees are alwaysusing the specified products, are following the proven processes and are doingthis in a clean, safe and efficient manner.
The Chef de Partie manages the departments stock onhand, consolidates requisitions from his team members and provides those to theSous Chef / Chef de cuisine for ordering.
The Chef de Partie knows the set standard for theprocured products, receives deliveries, stores deliveries and follows basicstorage rules. The Chef de Partie ensures all products are covered, labeled anddated.
The Chef de Party leads the daily food tasting,creates the records required and uses this opportunity to share his knowledgewith the team. The Chef de Partie provides needed information to his designatedFront of House team.
