· 负责各区域洗碗间餐具清洗、消毒检查工作及粗加工间原材料的处理，跟进各区域的环境卫生及设施设备工作。
· 查看中晚餐预定信息，做好人员安排。
· 巡视餐具清洗情况，督促各区域员工做好早餐收尾工作，检查管事部各类设施设备是否完好。
· 召开班前会，对前次各项工作加以总结，提出要求，传达上级工作指令。
· 开餐进行期间，在各洗碗间进行巡视，对清洗餐具进行抽样检查。
· 负责监督管事员工遵守餐饮部的工作规章制度，及监督员工按照标准做好相关餐具的洗涤工作。
· 负责检查保洁柜的卫生，确保保洁柜卫生及餐具摆放整齐有序。
· 晚餐工作同中午，每餐餐厅工作结束后，检查各洗碗间垃圾房的卫生及收尾情况。
· 每周组织员工对各区域卫生进行大扫除。
· 每周一做好一周计划。
· 每周向主管上交一周配套问题汇总。
· 每月组织员工对洗碗机内外进行保养。
· 确保员工了解并使用饭店有关消防和生命安全/紧急事件的程序。
确保员工对饭店食品安全和卫生标准给予必要的小心防范。
