岗位职责
1.负责酒店西餐部餐饮出品和服务，以及各项行政管理工作，并接受餐饮部经理的督导。
2.制定本部月度、年度的营业计划,领导部门全体员工积极完成各项经营指标和接待任务，及时分析和总结月度、年度的经营情况。
3.根据不同时期的需要和市场情况，制订销售计划，包括有特色的食品、时令菜式和饮品的推广计划等。
4.制定操作规程、服务规则的服务标准，检查管理人员和服务人员的工作质量和服务态度、出品部门的食品(饮品)质量及各项规章制度的执行情况，发现问题及时解决。
5.制订服务技能、烹饪技术培训计划和考核制度，定期与总厨研究新菜式及品种。
6.建立物资管理制度，保管好餐厅的各种用品。
7.制定餐饮出品的标准、规格和要求，掌握良好的毛利率，抓好成本核算；加强食品原料及物品的管理，降低费用，增加赢利，减少生产中的浪费。
8.不定期地征求客人意见，听取客人对餐厅服务和食品的评价，及时进行研究，调整相应对策，以便为客人提供良好的就餐环境。
9.督导各级业务管理人员进行业务知识及工作业绩考核，不断提高工作水平和业务能力。
10.熟悉和掌握员工的思想情况、工作表现和业务水平，抓好员工队伍建设,开展经常性的礼貌礼仪教育和职业道德教育，注意培训、考核和选拔人才，通过组织员工活动，激发员工的工作积极性。
11.参加酒店经理例会及各种重要的业务协调会议，与酒店各部门建立良好的关系，互相协作,保证营业工作顺利进行。
12.抓好设备、设施的维修保养，提高完好率，加强日常管理，以提高工作效率。
13.抓好卫生工作及安全工作，组织环境、操作方面的卫生检查，贯彻执行餐饮卫生制度，开展经常性的安全保卫、防火教育，确保安全。
Job responsibilities
1. Responsible for the catering products and services of the hotel’s western food department, as well as various administrative management tasks, and accept the supervision of the catering department manager. 
2. Develop monthly and annual business plans for the department, lead all employees of the department to actively complete various business indicators and reception tasks, and analyze and summarize the monthly and annual business conditions in a timely manner. 
3. According to the needs and market conditions in different periods, formulate sales plans, including special foods, seasonal dishes and drinks promotion plans. 
4. Develop service standards for operating procedures and service rules, check the work quality and service attitude of managers and service personnel, the quality of food (drinks) in the production department and the implementation of various rules and regulations, and solve problems in a timely manner. 
5. Develop service skills, cooking technology training plans and assessment systems, and regularly research new dishes and varieties with the chef. 
6. Establish a material management system and keep all the supplies in the restaurant. 
7. Formulate standards, specifications and requirements for catering products, master a good gross profit margin, and do a good job of cost accounting; strengthen the management of food raw materials and articles, reduce costs, increase profits, and reduce waste in production. 
8. From time to time, solicit the opinions of guests, listen to the guests' evaluation of restaurant services and food, conduct research in a timely manner, and adjust corresponding countermeasures in order to provide guests with a good dining environment. 
9. Supervise business managers at all levels to conduct business knowledge and work performance assessments, and continuously improve their work standards and business capabilities. 
10. Familiarize with and master the staff’s ideological situation, work performance and business level, do a good job in the construction of the staff team, carry out regular politeness education and professional ethics education, pay attention to training, assessment and selection of talents, and stimulate employees’ motivation by organizing staff activities Work enthusiasm. 
11. Participate in hotel managers' regular meetings and various important business coordination meetings, establish good relationships with various departments of the hotel, and collaborate with each other to ensure the smooth progress of business work. 
12. Do a good job in the maintenance of equipment and facilities, improve the intact rate, and strengthen daily management to improve work efficiency. 
13. Do a good job in sanitation and safety, organize environmental and operational sanitation inspections, implement the catering sanitation system, and carry out regular safety protection and fire prevention education to ensure safety.
