Administration

§  协助确保餐饮部运作符合其酒店策略,适当执行酒店规章。

Assists to ensure that the Food and Beverage activities are aligned with the respective Corporate Strategy, and that the Hotel Actions have been implemented where appropriate.

§  协助制定、保持及更新详细的部门营运手册。营运手册要包括部门的政策及程序,部门的工作程序及标准。确保每年的更新要准确反映任何改变。

To assist with the development and maintenance of a detailed Department Operations Manual that reflects policies and procedures work processes and standards of performance within the Division.

§  协助准备餐饮部的年度业务计划,确保部门目标中全面阐述了酒店的生意目标及员工的需要。

To assists with the preparation and regular update of the Food and Beverage Departmental Budget, in close cooperation with Assistant Director of Food & Beverage and the Director of Food and Beverage ensuring targets are met and costs are effectively controlled.

To participate in the formulation of the Annual Marketing Plan to established a list of marketing activities in line with the compilation of the Annual Business Plan.

Conducts regular divisional communications meetings and ensure that departmental briefings and meetings are effective and conducted as necessary.

§  参加每月和每日餐饮部日常会议。

To attend monthly Food and Beverage meeting and daily operations meeting.

§  参加餐饮行政总监主持的会议和简报。

To attend all other meetings and briefings as directed by the EAM - Food and Beverage.

§  完成每日部门日志。

To complete the Daily Log-sheet.

§  根据营业状况排班,确保有足够的人手。

To plan the outlet weekly roster and work schedules to ensure that the outlet is adequately staffed to handle the level of business.

§  根据使用状况和安全库存量申领客人用品。

To request guest supplies according to consumption and established par stocks.

§  维护部门信息板。

To maintain the outlet bulletin board.

§  确保部门的前场和后场区域干净、整洁有序。

To ensure that the outlet is kept clean and organized, both at the front as well as the back of the house.

§  联系并且协调餐务部和客房部严格按照清洁时间表进行清洁。

To liaise and organize with Stewarding and Housekeeping that the established cleaning schedules are strictly adhered to.

Operational

§  确保贯彻执行酒店最基本的品牌标准。

Ensures that minimum brand standards have been implemented.

§  确保根据经营理念对部门进行高效地管理,根据标准提供有礼的、专业的、高效并且富有弹性的服务。

To ensure that the outlet is managed efficiently according to the established concept statement, providing courteous, professional, efficient and flexible service at all times according to the established standards.

§  以支持和灵活的态度与其他餐厅经理紧密合作,着眼于整个酒店的成功和酒店客人的满意度。

Works closely with other Outlet Managers in a supportive and flexible manner, focusing on the overall success of the hotel and the satisfaction of hotel guests.

§  能够工作得富有弹性,能够适应餐饮部不同部门和酒店安排的其它部门工作。

To be flexible and adapt to rotate within the different departments, sub departments of the Food and Beverage division or any others departments assigned by the hotel.

§  在营运过程中将对于餐饮产品的检验和监督贯穿始终,并在适当的情况下做出反馈。

Tastes and monitors the food and beverage products served throughout the operation, provides feedback where appropriate.

§  监督餐厅的服务和餐饮标准。在必要时,与餐厅副理、行政副总厨和厨师长一起实施正确的措施。

Monitors service and food and beverage standards in the Outlet.  Work with the Assistant Outlet Managers, Executive Sous Chefs and Chef de Cuisines to take corrective actions where necessary.

§  与厨师长共同对餐饮营运进行频繁而全面的检查。

Conducts frequent and thorough inspections together with the Chef de Cuisines, of the Food and Beverage Operation.

§  经常检查餐饮准备中仅可用新鲜的产品。

Frequently verifies that only fresh products are used in food and beverage preparation.

§  协助厨师长/行政副总厨提出富有创意的建议和想法。

Assists the Chef de Cuisines /Executive Sous Chefs with creative suggestions and ideas.

§  监督对所有运营设备和营业用品的月度盘点。

Conducts monthly inventory checks on all operating equipment and supplies.

§  针对每日营运和质量控制与厨房密切沟通。

Liaises with the Kitchen and Beverage Department on daily operations and quality control.

§  对菜单上的所有菜品和饮料有全面的知识和理解,并能推荐菜品和饮料的搭配及促销。

Have a thorough knowledge and understanding of all food and beverage items in the menu and the ability to recommend Food and Beverage combinations and upsell alternatives.

To be a hands-on manager and be present at all times in the outlet, especially during busy periods.

People Management

Oversees and assists in the recruitment and selection of all Food and Beverage associates.   Adheres to hotel guidelines when recruiting and uses a competency-based approach to selecting associates.

Oversees the punctuality and appearance of all outlet associates, making sure that they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department’s grooming standards.

Maximises the effectiveness of associates by developing each of their skills and abilities through the appropriate training, coaching, and/or mentoring.
