5. 对原料进行拣剔、洗涤、除尽烂叶、泥沙、皮、筋、瓤、籽、等;
6. 按要求对水产、禽、畜进行宰杀,拆卸削剔分档取料提高原料的利用率;
7. 注意下脚料的综合利用,降低菜品成本;
8. 负责菜肴切配和干货原料的涨发工作,保证及时向炉灶提供合乎规格配份的菜品;
9. 负责食品原料在烹饪前的细加工,负责熟料,干货加工和原料切配;10. 负责生、熟馅料制作,原料腌制,上灶前各种原料的刀工处理;
11. 负责对已加工的各种原料按菜点烹制要求配菜。
