Role:
The Floor Manager at Prada Mi Shang is responsible for orchestrating the front-of-house guest experience to the highest standards of luxury hospitality. You will lead the service team on the floor, ensuring every detail—from guest arrival to departure—reflects the precision, elegance, and warmth of a world-class Italian fine-dining venue.
Responsibilities:
1. Guest Experience & Service Excellence (Luxury Benchmark)
• Lead the daily floor operations to deliver a flawless, personalized guest journey.
• Anticipate guest needs without intrusion—recognizing repeat guests, noting preferences (seating, wine, dietary needs), and acting on them before being asked.
• Manage guest recovery with discretion and authority, resolving complaints immediately and turning potential issues into loyalty-building moments.
• Ensure all service rituals are performed with theatrical elegance but natural ease.
2. Operational Floor Management
• Open and close the floor, inspecting mise-en-place, table settings, lighting, music, temperature, and floral/decorative elements to Prada Mi Shang’s visual standards.
• Control the flow of service—pace courses, monitor kitchen timing, coordinate between pass and tables, and manage table turns without rushing guests.
• Supervise reservation book and seating plan, optimizing covers while maintaining ideal guest spacing and ambiance.
• Conduct daily line-ups (pre-shift briefings) communicating VIPs, special occasions, menu changes, and wine highlights.
3. Team Leadership & Training
• Direct, motivate, and coach a team of Commis, and Runners, etc.
• Implement ongoing training modules: Italian service etiquette (silver service, carving tableside), wine and sommelier collaboration, and non-verbal guest cue reading.
• Conduct side-by-side coaching during service, correcting technique in real-time without disrupting guest experience.
• Schedule shifts, approve time-off, and manage floor coverage.
4. Beverage & Culinary Collaboration
• Work closely with the Head Sommelier to ensure wine service is seamless—decanter delivery, glassware standards, proper pouring technique.
• Partner with the Chef to understand daily specials, ingredient sourcing and any potential kitchen constraints.
• Maintain deep menu knowledge to guide team in upselling and answering guest questions with authority.
5. Luxury Ambience & Presentation Standards
• Uphold Prada Mi Shang’s design integrity—every napkin fold, stemware shine, and server’s posture must reflect the brand’s aesthetic heritage.
• Ensure team grooming, uniform, and personal presentation meet standards.
• Monitor restroom, hallway, and lounge areas for tidiness and restocking.
6. Financial & Administrative Duties
• Manage floor inventory to minimize breakage and loss.
• Assist in controlling labor costs by adjusting floor coverage based on forecasted covers.
• Support end-of-day cash reconciliation, POS accuracy, and void/courtesy check approvals.
• Track guest feedback and report weekly service KPIs to GM.
