厨房运营管理
- 全面负责厨房的日常运作，包括热菜间、冷菜间、面点间等各厨房区域，合理安排工作流程，确保厨房高效运转。
- 制定厨房的规章制度和操作规范，监督厨房员工严格遵守，保证厨房工作秩序和食品安全。
菜品研发与质量控制
- 主导新菜品的研发，根据酒店餐饮定位、市场趋势和顾客需求，设计出新颖、美味且符合五星级品质的菜肴。
- 严格把控菜品质量，从食材采购、验收、加工到烹饪、装盘的每个环节都进行监督，保证菜品的色香味形俱佳。 成本控制与库存管理 - 参与厨房成本预算的制定，合理控制食材成本、调料成本和人力成本等，减少浪费，确保厨房成本在预算范围内。
- 管理厨房食材和调料的库存，定期盘点，根据营业情况和库存数量合理安排采购计划。
人员管理
- 负责厨房团队的建设，包括招聘、培训、考核等工作，提升团队整体厨艺水平。
- 合理安排厨房员工的工作岗位和班次，激发员工的工作积极性，营造良好的工作氛围。
沟通协作
- 与餐饮总监、餐厅经理等密切沟通，了解顾客反馈，及时调整菜品和服务。
- 与采购部门协作，确保食材的供应质量和及时性；和其他部门配合，完成酒店的大型宴会等餐饮活动。
