【岗位职责】

1、全面负责酒店中厨房的日常运营管理，包括菜单设计、菜品研发、成本控制及厨房团队管理

2、制定并执行中餐厨房的标准操作流程(SOP)，确保食品安全、卫生及出品质量符合酒店标准

3、根据市场需求和季节变化，定期更新菜单并创新菜品，提升宾客用餐体验

4、负责厨房人员的工作安排、培训及绩效评估，打造高效专业的厨师团队

5、严格控制食品成本，优化采购流程，合理控制库存，减少浪费

6、与其他部门密切配合，确保宴会、会议及特殊活动的餐饮服务顺利执行

7、定期检查厨房设备维护情况，确保设施正常运转

【岗位要求】

1、具备10年以上中餐厨房工作经验，其中至少5年五星级酒店行政总厨或同等职位管理经验

2、精通粤菜、川菜等主流中餐菜系，具备扎实的烹饪功底和创新能力

3、熟悉厨房成本控制、菜单定价及食品卫生安全管理体系

4、出色的团队领导能力和沟通协调能力，能有效管理多元文化背景的厨师团队

5、具备较强的抗压能力，能适应高强度工作环境及灵活的工作时间

6、持有国家认可的中式烹调师职业资格证书（高级或以上）者优先

7、对食材品质有敏锐的判断力，了解高端餐饮市场趋势
