Major Responsibility主要工作职责
Prepare a wide variety of cold dishes according to standard recipes and
seasonal menus, ensuring consistent taste, quality, and portion control.
根据标准食谱及季节性菜单，准备各类冷菜，确保口味、质量及份量的一致性。
Demonstrate creativity and skill in the plating and garnishing of cold
dishes.
在冷菜的装盘与装饰上展现创意与技巧。       
Prepare and maintain an assortment of house-made dressings, sauces, dips,
marinades, and preserves.
准备并维护各类自制沙拉酱、调味汁、蘸酱、腌泡汁及腌制品。        
Receive, inspect, and properly store all raw materials destined for the
cold kitchen, with strict adherence to temperature control protocols.
接收、检查并妥善储存所有进入凉菜间的原材料，严格遵守温度控制规程。        
Operate and maintain all cold kitchen equipment (e.g., slicers, mixers,
blenders) and ensure the cold room, refrigerators, and work surfaces are
impeccably clean and organized.
操作并维护所有凉菜间设备，确保冷库、冰箱及工作台面清洁与整齐。       
Enforce and maintain the highest standards of sanitation and hygiene
within the cold kitchen. This includes mandatory use of gloves, frequent hand
washing, and strict separation of raw and ready-to-eat foods to prevent
cross-contamination.
在凉菜间内执行并维持高水平的清洁与卫生标准。包括强制使用手套、频繁洗手、以及严格执行生熟食品分离以防止交叉污染。        
Monitor and record temperatures of cold storage units and prepared items
as per Hazard Analysis and Critical Control Point (HACCP) guidelines.
根据危害分析与关键控制点(HACCP)指南，监控并记录冷藏设备及已制备品的温度。        
Control food cost by minimizing waste, practicing proper rotation (FIFO),
and accurately managing inventories of perishable items.
通过减少浪费、正确执行物料轮转，精确管理易腐品库存来控制食品成本。       
Adhere strictly to Ascott's policies, procedures, and standards.
严格遵守雅诗阁的政策、程序和标准。        
In compliance with the Ascott Group's Environmental Health and Safety
(EHS) guidelines and policies, pay attention to energy conservation and the
safe operation in daily work, responsible for the risk management within the
scope of his own position.

Fulfill any additional tasks assigned by superior.

Requirements资质需求 ：
High school diploma or vocational technical school certificate. Formal
culinary training with a focus on garde manger or cold kitchen is highly
preferred.
高中或中技学历。接受过专注于冷厨或凉菜方面的正式烹饪培训者优先。       
Minimum 2-3 years of proven experience in a cold kitchen/garde manger
section within a hotel, upscale restaurant, or catering establishment.
2-3年以上在酒店、高端餐厅或餐饮机构冷厨/凉菜间工作的经验。       
Excellent knife skills and artistic flair for food presentation.
出色的刀工及食物造型艺术感。        
In-depth knowledge of food safety and sanitation standards, particularly
pertaining to cold food handling, temperature danger zone, and HACCP
principles.
深入了解食品安全与卫生标准，特别是与冷食处理、温度危险区及HACCP原则相关的知识。      
Strong understanding of various cuisines’ cold dish techniques,
ingredients, and flavors.
深入了解不同菜系的冷菜技术、食材及风味。        
Good communication skills and ability to work independently as well as
part of a team.
良好的沟通能力，既能独立工作，也能团队协作。      
Willingness to work flexible shifts.
接受弹性排班。        
Physically fit to stand for extended periods and work in a cool kitchen
environment.
