岗位职责
- 严格遵循万豪集团餐饮标准、食品安全规范，全面负责厨房整体运营管理；筹备阶段深度参与厨房布局复核、设备验收、菜单研发制定、厨具物资盘点申购、团队组建培训、开业试菜演练、集团开业验收对接工作。
- 把控菜品出品质量、口味、摆盘标准，管控后厨生产流程，落实食品卫生、食材储存、消杀防疫制度，规避食品安全风险。
- 负责后厨团队管理，完成后厨人员招聘、排班、技能培训、绩效考核，搭建稳定厨师队伍。
- 管控食材成本，做好库存管理，减少食材损耗；审核食材申购，监督食材验收。
- 对接采购、餐饮部经理，配合完成自助餐、宴会、主题餐饮活动菜品保障。
- 落实厨房设备日常巡检报修，做好安全防火、燃气安全管理；输出后厨相关运营报表，向上级汇报工作。
任职要求
- 大专及以上学历，烹饪相关专业；有酒店开业筹备完整经验优先，外资 / 万豪系酒店厨师长工作经验优先，持有高级厨师证、食品安全管理员证书优先。
- 5 年以上高端酒店厨房工作经验，3年及以上同级别厨师长管理经验，熟悉宴会、自助、零点厨房运作。
- 精通菜品研发、成本管控、后厨团队管理，熟悉食品安全生产规范。
- 抗压能力强，筹备期工作繁重，可接受应急加班，具备较强的统筹协调和风险预判能力。
- 认同万豪集团管理制度，重视出品品质与食品安全。
