Based within the Kitchen Department at Mandarin Oriental, Guangzhou, the Executive chef is responsibility for directing training, supervising, planning, coordinating, of all areas within the culinary department, ensuring quality products for our guests, and secure profit margins while always maintaining the corporate image of the company.
Duties and Supporting Responsibilities
- Able to lead successful our culinary and stewarding teams according to brand standards.
- Enforce and follow strictly all food & hygiene related government requirements.
- Enforce and ensure that all FLHSS / HACCP /Sustainability and general Brand Standards are consistently in place, checked and correctly applied.
- Ensure Other Expenses + Food Cost are managed within budget and improvement recommendations are provided based on menu engineering and sales statistics.
- Oversee and lead Waste Management solutions and ensure compliance with all regulations.
- Active involvement in commercial activities /promotions to growth awareness + profitability.
- Share the interest and passion for new developments and creativity to ensure an everchanging F&B offering.
Job Requested:
- Minimum of 3 years’ experience in the same position in an international five star hotel.
- Excellent communication of both spoken and written English and Chinese.
- Strong leadership skills and interpersonal skills.
- Create and develop new dishes and recipes by keeping up with the latest market trends.
- Constantly strive to improve kitchen operating procedures.
- Carry out other duties as and when requested by management.
- Identify areas of improvement through suggestions.
