Ensures that all the Outlets and Banquets are managed efficiently according to established Concept Statements. Monitors service and food and beverage standards in all Outlets and Banquets.
Works with the Outlet Manager in own area of responsibility, Conference and Banqueting Manager and respective Chef de Cuisine to take corrective action where necessary to ensure Concept Statements and Standards of operation are maintained to agreed Standards.
Conducts frequent and thorough inspections together with the Executive Sous Chefs.
Frequently verifies that only fresh products are used in Food and Beverage preparation.
Frequently tastes Food and Beverage products in all Outlets and is demanding and critical when it comes to quality.
Assists the EAM Food and Beverage and Executive Chef with creative suggestions and ideas.
Ensures services provided by the department are always available and are always carried out to defined Standard with the utmost efficiency, consistency and courtesy as detailed in the Department Operation Manual.
