Job Description 岗位职责描述
General
• To advice guests on their wine selection and to supervise the day-to-day service of wine on floor.
• To elaborate the wine list.
• To update the vintage or stock availability on wine/ beverage lists.
• Reduce slow moving items on the wine list.
• Impose a strict control on beverage stock, including wine cellar in all F&B outlets.
• Initiate training for every position to enhance the constancy in wine service.
• Create “Sommelier team” and groom staffs to be next sommelier
• Control that wine service procedures are being performed as per standard and efficient and excellent service to each guest is being provided.
• Controlling the cleanliness of the wine cellars and storage
• Conduct weekly / monthly training internally to staff on wine to enhance employee’s product knowledge and competency.
• Participate in daily briefings and hotel staff meetings.
• Promote and bring new ideas to increase wine sales in the restaurants.
• Increase Catering beverage revenue by participating food tastings and make suggestions
• Develop wine “retail sales” in the IHG Boutique
• Impose a strict control on stock, including private wine cellar.
• Update the vintage or stock availability on wine/ beverage lists regularly.
• Provide accurate and updated information about wine products, vintage, cigars or stock availability to restaurant staff.
• Profound monthly wine sales analysis and report to FBO.
• Control wines overall costs, make monthly cost analysis and report to FBO.
• Observing all licensing laws and regulation and hotel policies pertaining to the operation of the wine program.
• Ensure compliance with current health and hygiene regulations.
• Able to work different shifts and to help other F&B departments if needed.
Management
• Encourage staff participation in briefings, meetings and trainings.
• Inspect grooming and attire of entire staff and rectify any deficiencies.
• Work harmoniously and professionally with co-workers and supervisors.
• Communicate with colleagues to provide service at an accurate time and delivering the correct items to correct tables with no confusion of what was ordered.
• Coordinate and maintain a good communication flow with other departments.
Guest Service
• Control that staff is performing a friendly, yet discreet and unobtrusive service to guests.
• Anticipate guest needs, ascertain satisfaction, and offer suggestions, and respond urgently and appropriately to guest concerns and requests.
• Take ownership of any guest complaint or urgent situation regarding beverage orders.
• Recognize and address potential intoxicated or disruptive guests.
Knowledge and Skills
• Have a solid knowledge of the Indigo behavioral standards.
• Maintain a complete knowledge of core and departmental standards.
• Solid knowledge of wines.
• Have a solid knowledge of food, wines and spirits.
• Extensive knowledge in wines and relevant terminology.
• Knowledge in pricing strategy regarding beverage items & wines.
• Have solid knowledge of food and beverage menu items and ingredients, preparation methods and how to explain each item to the guests.
• Have a solid knowledge of liquor and cocktails.
• Be skillful to serve wine / beverage / cigar and their service sequence and perform services in accordance with the hotel standards.
• Knowledge of how to post items and use the Micros POS system as per policies and procedure in place.
• Have strong organizational skills.
RESPONSIBILITIES
Other Duties:
• Perform tasks or projects assigned by hotel management.
• Take orders from guests, check completed beverage orders with the guest’s original order.
• Greet guests, explain selected items to the guest using interesting descriptions of the each item’s, origin, taste, and preparation methods.
• Suggest wines matching ordered food items; serve the wine and any other beverage items and cigars to F&B outlet guests.
• Willingness to represent the hotel participate the wine seminar, wine exhibition, competition or training when request.
Key Performance Indicators:
• Wine sales overall performance, average check and costs. (FOCUS on YLC and SE)
• Knowledge of menu ingredients, F&B outlets offerings and hotel services.
• Ability to explain wines to guests and Captains/Bartenders and to create training for all staff involved.
• Facility and ability to train staff in all areas related to Wine.
• Ability to recognize when the situation is out of hand and inform Director of F&B or F&B Manager or Beverage Manager of any problem or complaint.
• Ability to build up a broad network and long-term relationship with wine suppliers with INTEGRETY.
• Build up “Wine” guest database
• Receipt of positive comments from guests.
• Coordinate series of wine dinners throughout a year
• Maintain a good and professional relationship with staff, coworkers and managers.
• Ability to perform well under pressure without compromising service quality and IHG standards.
Competencies:
• Reading, writing and oral proficiency in the English and Chinese language.
• Strong communication with staff, guests, managers and inter-personal skills.
• Service etiquette and 5 stars service standards.
• Ability to work well under pressure.
• Several year experience in similar position (Food service or related work).
• Computer literate in Word, Excel, Micros.
• Able to work different shifts and help other F&B departments when required.
