SCOPE  范围

The overall scope of the job includes serving food and beverages to guests in the assigned place of work, providing a courteous, professional, efficient and flexible service consistent with the standards of the hotel and Kempinski in order to encourage sales and maximize guest satisfaction.

此项工作的总体范畴包括在所工作的区域为客人提供食品和酒水服务,提供周到、专业、高效和灵活的服务。与凯宾斯基饭店DNA的宗旨相统一,根据饭店的服务标准赢得客户餐满意度,促进销售最大化。


OVERALL OBJECTIVES  总体目标

The job of Local Management Trainee is executed satisfactorily when:

本地管理实习生的工作范畴应确保完成以下职责:

-All rules & regulations are strictly adhered within the hotel including hotel’s policy on fire and safety as well as hygiene regulations including HACCP.

严格执行酒店内部所有规章制度和法规,包括酒店消防和安全政策,以及卫生法规,包括《危害分析及关键点控制管理体系》。

-The sales are driven to the outlet’s full potential and that budget is adhered to.

根据预算,创造餐饮部的销售潜力最大化。

-A High quality of product and service is maintained in the outlet.

始终保持服务产品的高质量和高品质。

-The outlet is developed in an entrepreneurial manner, looking for opportunities to generate more business at all times.

发扬本部门的主人翁意识工作表现,寻找机会,创造企业业务生产最大化。

-Innovation and new ideas are fostered, collected and communicated to the Head of Department.

注重创新和新理念的培养,收集信息并传达给部门的负责人。

-The growth of internal talent within the outlet is successfully implemented.

MAIN RESPONSIBILITIES  主要职责

-Director of F&B Manager / Deputy Director of F&B   Manager / Assistant F&B Manager / Restaurant Manager

下属餐饮部总监 / 餐饮部行政副总监 / 餐饮部副经理 /餐厅经理

-Responsible for Head Waiter/ Waitress, Waiter/ Waitress & Host/ Hostess

直接管理餐厅高级服务员,服务员和领位。

-Report to duty punctually wearing the correct uniform, clean and well pressed including appropriate shoes (polished) and nametag at all times according to the hotels dress code & Kempinski grooming standards, maintaining a high standard of personal appearance and hygiene at all times.

守时,穿着正确的工服,确保工服干净,熨烫平整,包括工鞋(闪亮发光),任何当班时间佩戴名牌,根据凯宾斯基饭店仪容仪表标准,维护个人整体形象,确保个人保持良好的卫生标准。

 -A courteous, professional and efficient service is provided at all times.

任何时间,为客人提供礼貌,专业且高效率的服务标准。

-All duties and tasks are performed as per the tasks required at the outlet.

根据本部门工作职责需求,完成所有相关工作任务与职责。

-Be knowledgeable of all services and products offered by the hotel.

熟练掌握饭店的服务标准和产品知识。

-Have a thorough knowledge and understanding of all food and beverage items offered by the department assigned.

全面了解并掌握本部门所提供的食品和酒水知识。

-Have the knowledge and understanding to explain and perform upselling all items offered by the department assigned as well as offering alternatives.

了解所销售产品的知识,对餐饮部出售的产品和替代产品做好推销工作。

-Monitor operating supplies, equipment and reduce spoilage and wastage successfully.

监控运营物品,设备;有效减少破损和浪费现象。

-Ensure that the place of work and surrounding area is kept clean and organized at all times.

定期进行组织安排工作,确保工作区域和周边地区场所保持清洁。

-Successfully perform opening and closing procedures established for the assigned outlet

确保本部门员工认真执行关餐和开餐流程。

-Handle guest enquiries in a courteous and efficient manner and report guest complaints and feedback to supervisors.

礼貌,积极且有效处理客人需求和投诉,并随时上报本部门主管人员。

-Report guest complaints immediately to the supervisors and ensuring follow up is performed with the guest.

向当班主管人员及时上报客人投诉,确保跟进客户处理意见。

-Being knowledgeable to operate the existing POS system based on the trained responsibility level as assigned in the department.

能够熟练操作POS系统,并为本部门的指定负责人做好培训工作。

-Understand and strictly adhere to the rules & regulations established in the hotel’s policy manual and the hotel’s policy on fire, hygiene, health & safety.

了解并严格按照酒店管理手册和酒店消防安全政策,卫生标准和健康法规执行。

-Maintain a good rapport and work relation with staff in the assigned department and within the hotel.

与本部门同事和酒店其他部门同事保持良好关心。

-Attend and contribute to all staff meetings, departmental trainings and hotel initiated trainings scheduled.

定期参加全体员工会议,部门培训和酒店培训。

-Undertake reasonable tasks and secondary duties as assigned by the Department Head.

根据部门管理者分配的任务,承担合理工作任务和附加职责。

-Respond to any changes in the department as dictated by the hotel management.

响应饭店管理层针对餐饮部发展做出的变化。

-Assist in carrying out scheduled inventories of products and operating equipment.

协助安排本部门物品及运营设备的盘点工作。

-Perform any other assigned reasonable duties and responsibilities as assigned.

执行合理工作安排并承担责任与义务。

-Projecting at all times a positive and motivated attitude and exercise self-control.

保持积极上进的心态,并锻炼自我的控制能力。

 

Operation  运营

-Establishes and reviews the standards of performance, in line with the operating concept of the restaurants and the hotel’s requirements & standards

根据餐厅的经营理念和酒店的要求及标准,建立和完善饭店运营表现。

-Assist with Outlet Manager to manage all service activities to ensure guest satisfaction and adherence to the operating procedures and Kempinski Standards.

协助餐厅经理管理所有服务活动,以确保客人满意并遵守操作规程和凯宾斯基饭店的服务标准。

-Participates in the development, implementation and review of standards of performance for the F&B service activities which meet our guests' needs and are in line with the operating concept of the individual outlets.  

参与制定,实施和审查符合我们客人需求的餐饮服务活动绩效标准,并符各个特色餐厅的经营理念

-In conjunction with the Director of F&B and Restaurant Managers identifies the training needs, plans the training activities, participates in the implementation of training and development activities and follows up to ensure their effectiveness.

与餐饮部主管和餐厅经理一起确定培训需求,计划培训活动,参与培训和发展活动的实施并跟进以确保其有效性。

-Coordinates service activities with the F&B management team to ensure that all guests are given friendly and caring service from their arrival until their departure.

-Assist with the Restaurant to maintain high visibility during meal service in order to ensure smooth running of operations, promotes good public relations takes corrective actions and handles customers’ complaints to ensure their satisfaction.

-Assist with Outlet Manager to monitor operation expenses to ensure the cost of food is in line with the annual budget.

Administration  行政

-Participate in F&B budgeting and forecasting

参与制定餐饮部的预算和预测

-Oversee and comment financial performances on a regular basis

定期对财务情况进行监督和评价

-Prepare sales analysis and statistics according to requirements to establish performance

根据需要准备销售分析和统计数据,以建立绩效

-Conduct and update competition check according to current competition sets

根据当前的竞争检查结果,更新竞争检查数据

-Prepare concepts & proposals according to current F&B projects and requirements

根据目前的餐饮项目和要求,准备计划书

-Assist in establishing and implementing menu designs and contents according

协助建立和实施菜单设计和内容更新

-Participate in marketing & promoting of F&B activities

参与营销和推广餐饮活动

-Liaise with Kitchen and Sales & Marketing Department regarding promotional details

与厨房和市场销售部门取得联系,了解促销细节

-Assist Director and Deputy Director of F&B in administrational work according to business needs and requirements

根据业务需要和要求,协助餐饮部副经理进行行政管理工作

 

Additional responsibilities and tasks can be added at any time according to the needs of the business and of the hotel.

附加责任与任务,根据饭店运营业务需求随时进行添加。
