SCOPE 范围

To produce an outstanding guest experiencewithin the outlet concept by managing a service team in cooperation with theculinary team. The Solana Kempi Deli Manager provides a courteous, professionaland efficient service in accordance with the restaurant, hotel and Kempinskistandards, driving sales and maximises profit.

OVERALL OBJECTIVES 总体目标

Allrules & regulations are strictly adhered within the hotel and Solanarelated restaurants including policy on fire and safety as well as hygieneregulations including HACCP.

Conduct yearlyperformance appraisals and TTTT’s for all employee of the Solana Kempi Deli, providing feedback ontheir job performance.

MAIN RESPONSIBILITIES 主要职责

Responsible to Head of Kempi Deli Manager of F&B Department.

下属餐饮部凯宾美食廊经理。

Responsible for Solana Kempi Deli Barista, waiter & waitress.

负责管理蓝色港湾凯宾美食廊咖啡师和服务员。

Provide a professional and courteous service at all times and ensure that all employees of the assigned outlet follow the example.

运营期间为客人提供专业,礼貌的服务,确保所有员工根据标准为客人提供服务。

Ensure that the place of work and surrounding area is kept clean and organised at all times.

定期进行组织安排工作,确保工作区域和周边地区场所保持清洁。

Execute and demand the team to execute the highest level of service and set-up standards at all times.

服务高标准化,确保员工在服务期间提供高标准的服务。

Be knowledgeable of all services and products offered by Solana Kempi Deli.

了解蓝色港湾凯宾美食廊酒店所提供的产品及所有服务标准。

Understand thoroughly the concept of Solana Kempi Deli and train all employees of the Deli in regards to the concept.

了解蓝色港湾凯宾美食廊运营内容,根据部门运营内容为全体部门员工进行培训。

Set an example in terms of service, products and guidance of the team that reflects the concept.

Actively participate in menu design of Solana Kempi Deli in cooperation with Head Chef and F&B Management Team.

与厨师团队及餐饮部管理层一起,共同完成蓝色港湾凯宾美食廊所出售自制食品的制定工作。Know Solana Kempi Deli scene and gastronomic character of the destination and be recognized in the market.

了解蓝色港湾凯宾美食廊情况,运营目标和美食特色,制定市场定位及目标。

Perform up selling for all items offered by Solana Kempi Deli assigned as well as offering alternatives.

对蓝色港湾凯宾美食廊所出售的产品和替代产品做好推销工作。

Be knowledgeable to operate the existing Opera, LANDA, MICROS system based on the trained responsibility level as assigned in the department.

能够熟练操作Opera, LANDA, Micros等系统,并为本部门的指定负责人做好培训工作。

Produce reports and analysis of Solana Kempi Deli and present report in the monthly performance meeting.

准备蓝色港湾凯宾美食廊报告和总结,并参加月度表现分析会议。

Lead Solana Kempi Deli efficiently in cost and expenses, constantly delivering the highest quality as well as driving high top line revenue and profit.

带领蓝色港湾凯宾美食廊全体员工有效做好控制成本和支出工作,不断推出高品质服务,创造收入和利润的最高峰。

Assist F&B Department in preparation of Solana Kempi Deli’s budget.

协助餐饮部做好蓝色港湾凯宾美食廊预算的准备工作。

Conduct monthly inventory of operating supplies and equipment together with the stewarding department.

与管事部共同进行月度运营物品的盘点工作。

Obtain an account for the correct settlement of all sales and be overall responsible for Solana Kempi Deli floats when and as required.

Implement a flexible work schedule based on business patterns.

Establish a pool of qualified and trained full time employees in conjunction with the hotel’s People Services Department.

Monitor operating supplies, equipment and reduce spoilage and wastage successfully.

Assist to prepare and review outlet’s operations manual updates annually in accordance with the Kempi Deli Manager.

Constantly improve the product quality by sourcing the best available products.

Support activities and cooperation with the suppliers.

Monitor and constantly improve quality and guest satisfaction of the outlet with the given tools (Leading Quality Assurance, Customer Satisfaction Survey).

Undertake reasonable tasks and secondary duties as appointed by the Head of Department.

Respond to any changes in Solana Kempi Dlei as dictated by the hotel management.

Handle guest enquiries and complaints in the outlet in a courteous and efficient manner and report to Kempi Deli Manager ensuring that the follow up is performed with the guest.

Ensure that the opening and closing procedures established for Solana Kempi Deli are followed.

Assign responsibilities to subordinates implementing a multi-tasking principle and check their performance periodically.

Plans and supervises the day-to-day operations of Solana Kempi Deli to ensure compliance with all policies, procedures, standards and aiming at satisfying and exceeding the clients’ expectations.

Establishes and reviews the standards of performance, in line with the operating concept of Solana Kempi Deli, which contribute to an attentive and distinctive experience that leaves our clients inspired.

Identification the training needs, assist in the development of a training plan and implementation of the training activities and follow up to ensure compliance and their effectiveness. At times, conducts training.

Inspects the dining room and staff working area, to ensure that the physical facilities and equipment’s are well kept and that coordinating the cleaning and maintenance and arranging for repairs and other services such as linen laundering adhere to, all health and safety regulations, plants servicing, etc.

Maintains high visibility during meal service in order to ensure smooth running of operations, promotes good public relations, takes corrective actions and handles customers’ complaints to ensure their satisfaction.

Coordinates the service activities with the pastry & connecting kitchen in order to achieve a timely delivery of food whilst ensuring effective communication.

Forecasts covers and revenues and then schedules staff accordingly covering Solana Kempi Deli opening hours, whilst controlling labor costs and minimizing overtime payment.

Manages and controls stock from the food and beverage operation effectively ensuring pars are respected.

Anticipates and maintains all materials and supplies in Solana Kempi Deli, ensuring their availability. Controls usage of all food items and appropriate usage of equipment’s, tools and service equipment’s ensuring all equipment’s is used in a correct and safe manner.

Monitors operating expenses to ensure the cost of sale is in line with the annual budget.

Keeps abreast of all emergency procedures, hotel promotions, product knowledge, VIP arrivals, upcoming events and brief direct subordinates accordingly so that they are able to anticipate and answer clients’ requests and questions.

严格履行所有紧急政策,饭店推销,食品知识,重要客人入住,未来活动和会议传达,确保员工能正确和准确地回答客人提出的问题。

Accomplishes a set of administrative duties such as attending meeting, writing reports, maintaining a logbook and other specific duties related to the job function.
