职位描述

·         Oversees the preparation and update of individual Departmental Operations Manuals.

协助监督各个部门操作指南的准备和更新。

·         Conducts regular divisional communications meetings and ensure that departmental briefings and meetings are effective and conducted as necessary. 

协助部门每日例会。确保部门每日的例会的效率和必要性。

·         Provides the Materials Department with detailed Product and Purchase Specifications for items used in the outlet. 

协助向采购部提供各个厨房所需的购物清单。

·         Ensures that all employees deliver the brand promise and provide exceptional guest service at all times. 

保证所有的员工时刻提供客人所期望的,并且符合我们酒店承诺的服务。

·         Ensures that employees also provide excellent service to internal customers in other departments as appropriate. 

保证所有的员工对我们酒店其他部门的员工同样提供高品质的服务。

·         Handles all guest and internal customer complaints and inquiries in a courteous and efficient manner, following through to make sure problems are resolved satisfactorily.

·         Spends time in the Operation (during peak periods) to ensure that it is managed well by the respective Stewarding employees and functions to the fullest expectations.

·         Ensures that breakages are administered so as to provide constant feedback to the operation as a tool to reduce breakages and losses.

确保对破损进行高效管理,向运作部门提供不断的反馈,作为减少破损及丢失的工具。

·         Strictly adheres to the established operating expenses and ensures that all costs are controlled.

确保所有成本被控制在已制定的部门运营预算内。

·         Participates in the formulation of Annual Operating Budget in determining projected operating expenses, operating equipment and FF&E requirements in line with the compilation of the Annual Business Plan.

协助制定年度运营预算,确定预期的运营费用、运营设备及固定资产需求,以配合年度业务计划的完成。

·         Manages costs proactively based on key performance indicators, works with the respective Heads of Department as appropriate. 

备及发出维修、保养申请,确保餐厅得到妥善的保养和维修。

·         Ensures new technology and equipment are embraced, 根据相关的数据控制成本,又需要的时候让部门主管参与其中。采用新的技术和设备,提高工作效率。 

·         Strictly controls inventories and par stocks in the operation for all operating equipment, Food and Beverage, FF&E items and to ensure that the outlet is adequately equipped.

严格控制库存,和固定设施的使用。并且确保所有的厨房都设施完善。

·         Assists to conduct monthly inventory checks on all operating equipment and supplies.

协助对所有的设施和供应商进行每月检查。

·         Controls the requisitioning, storage and careful use of all operating equipment and supplies.

管理物资申请,库存,定期检查仪器的操作情况。

·         Assists to conduct daily pre-shift briefings to employees on preparation, service and F&B events.

组织每日的例会,沟通酒店的最新信息,和宴会准备。

·         Ensures that each outlet is supplied with clean and dry operating equipment.

保证每个厨房仪器的清洁。

·         Ensures that the food production areas are supplied with clean and dry kitchen utensils.

保证为所有食品生产部门提供洁净和干燥的厨房用具。

·         Supervises night cleaning contractors in kitchen and back-of-house food and beverage areas.

·         Ensures that back-of-house cleaning schedules and garbage runs are strictly adhered to and areas are cleaned according to established standards.

·         Has thorough understanding and knowledge of all Food and Beverage equipment needs and network with sister hotels and other hotels to borrow equipment as and when needed.

·         Oversees and assists in the recruitment and selection of all Stewarding employees.   Adheres to hotel guidelines when recruiting and uses a competency-based approach to selecting employees.

 监督和协助餐务部员工的录用。坚决依照酒店的制度和职位的能力需要来选择员工。

·         Oversees the punctuality and appearance of all Stewarding employees, making sure that they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department’s grooming standards.

监督所有餐务部员工的出勤,仪表,保证所有人的着装,个人形象,个人卫生符合部门和酒店的要求。

·         Maximizes the effectiveness of employees by developing each of their skills and abilities through the appropriate training, coaching, and/or mentoring.

通过适当的培训,增强我们员工的技能,提高厨房的工作效率。

·         Conducts annual Performance Development Discussions with employees and to support them in their professional development goals.

组织年度工作评估总结员工的进步,并在专业技能发展上给予支持。

 

Other Duties 其他 


熟悉行业内的相关规定和员工法规。

·         Understands and strictly adheres to Rules and Regulations established in the Employee Handbook and the Hotel’s policies concerning fire, hygiene and health and safety.

熟悉并严格遵守员工手册中的规章制度,及酒店关于防火、卫生、健康和安全的制度。

·         Maintains strong, professional relationship with the relevant representatives from competitor hotels, business partners and other organizations.

 与竞争酒店,商业伙伴和其他的组织建立和维持稳固的,专业的关系。

·         Responds to changes in the Food and Beverage function as dictated by the industry, company and hotel.

根据酒店、行业和公司的指引,回应需求、改变,执行任何合理的任务及额外职责。

·         Attends training sessions and meetings as and when required.

根据安排出席酒店和部门的培训以提高技能和知识。

·         Carries out any other reasonable duties and responsibilities as assigned.
