岗位职责/职位描述

岗位职责：

1. 在行政总厨的领导下，主持西餐厨房的日常管理工作。

2.协助行政总厨制定菜单，根据季节变化，不断创新自助餐风格。

3.调动厨师积极性，监督菜肴的质量，满足客人对自助菜肴质量的特殊要求。

4.监督宴会、酒会、团体自助餐出品的准备工作和出菜过程。

5.制定采购计划，及时提供采购单，签署厨房每日领货量。

6.坚持质量标准，督导厨师按标准化技术操作。

7.监督厨师正确使用和维护厨房设备，安全生产。

8.评估属下厨师的工作表现，检查厨师的仪容仪表、卫生状况。

9.做好食品成本控制工作。

10.合理排班，监督出菜顺序和速度，创造良好的工作环境。

11.研究新菜式，不定时推出新菜式和调试。

12.做好市场调查工作，确保菜式符合客人口味。

13.完成上级指派的其他任务。

14.负责制定本范围的年度和月度工作计划、准确及时提交财务预算、财务分析需要的相关数据。

15. 根据酒店和部门下达的各项指标，制定相应的工作计划及管理措施，并带领下属完成任务。

16.不断学习先进的管理方法，提高经营管理水平。
